Hi all, quick advice for those using AGAR FLAKES: I've just discovered through trial and error and help from another channel I've been following that agar agar powder is 3 times stronger than agar flakes - the only thing available near me, so if you're using flakes instead of powder use three times as much for the recipe.
I finally tried the easy cheese sauce. Omg Yum!! I did 1.5 tbsp of oil & chick pea flour (gluten-free option), 1 tsp salt, 1.5 tbsp nut. yeast, 6 dashes of cayenne, and since I didn't have milk I blended 1 c water w/ 1/3 c mildly salted cashews in my vitamix until the chunks were gone. Likely high in salt, but so tasty. Next time, I'd experiment with more spices and add a dash of turmeric for a yellow tint.
+Karolina Jaworska I found the book "Vegan for Life" by Jack Norris and Virginia Messina to be useful. Have a look at it. It will give you valuable information about nutrition.
an update for people who comment on here and care: im almost vegan now. when i was writing the comment I was vegetarian for 1.5 years. now the only thing i eat from animal products are sometimes eggs (2 eggs a week probably? sometimes more, sometimes less) that my dad gets me from a local farmer friend who treats his chickens with love and respect, and 1 tsp of honey with my coffee each day.
I can't eat dairy or gluten, so many of my meals would be considered vegan. I miss cheese the most, but I hate paying so much for dairy free cheese. I will definitely try this out. Thanks!
Your videos helped me transition to vegan diet six years ago. It was a good foundation for my understanding and falling in love of plant-based recipes. Thank you!
I've been vegetarian for years now but haven't gone completely vegan, mostly because I can't go without cheese (and the pre-made vegan cheeses are usually gross or loaded with preservatives). If these recipes work for me I may finally be ready to make the switch! Thanks Ela; really appreciate these ideas :)
+StarBelle23 same, I'm afraid to get into processed vegan cheeses! incase it's any encouragement, I loved cheese too and found that it's the absolute last thing I crave now (even healthier vegan cheeses like these) since having gone vegan, which I never would have expected
I have to tell you, I absolutely love the second recipe *so* much!! I watched this video when I first became a vegan, and wrote it down. Since then, I've eaten it so much that for awhile I actually forgot where I found the recipe from! I'd say I have it at least once a week (when I first became a vegan that was my go-to meal and ate it probably 2-3 times weekly hehe). I love making mac & cheese with it, and love topping baked potato, fries, and tortilla chips with it. It tastes extra delicious if it's made with sweetened coconut milk ^~^ Thanks for the recipes!
Hi, Ela. Thanks so much for the fantastic recipes! I made the solid cheese last week, and it was really tasty; haven't had so many cheese toasties since I was a student! Ha! The only thing was, the consistency was too soft... to the point where it would squash when I handled it. It was still perfectly edible, and it held its molded shape when left alone... but I must have sone something slightly wrong. Do you think I added too much water and/or not enough agar agar? The sweet potato I used was smaller than the one in the video, come to think of it; it was the only one I had left.
Sarah Tran Cashew based Parmesan has become a staple in our house. I use a similar recipe and make a double batch*, which fills two 8 ounce shaker bottles. One goes in the freezer until the other is used up. Between the two bottles we can get four to six months of Parmesan. * double batch vegan Parmesan: 1-1/2 cups raw cashews (not soaked) 6 tbsp nutritional yeast 1/2 tsp garlic powder 1-1/2 tsp sea salt
Thank you! Very helpful. I have friends coming over for Thanksgiving and I really want them to feel comfortable and have some different types of vegan dishes.
+Potato Dreams it's had its ups and down but it's going really good rn. My cravings for dairy are pretty much gone and I'm really enjoying this lifestyle. It's honestly one of the best decisions I've ever made. I feel great :)
i also struggled with letting go of cheese but once i found out that the craving didn't come from the taste but from the saturated fats in it then i just started to eat coconut oil and all my cheese or eggs cravings disappeared! i've been vegan since 1999 and it was really hard at first because we didn't have so many options and internet knowledge. it's crazy how the world changes in just a few years! anyway good luck and thanx for being vegan!
wow I'm a cheese/dairy lover but I just decided to give it up bc vegan cheeses are not easily accessible here. Your recipes look amazing, I just have to try them some time! 👍✨💖
I havent watched many nutritional yeast cheese recipe videos but I'm certain this is the holy grail. Brand new nutritional yeast user here. Will definitely try all of them!
Oh my goodness, I just made the vegan Parmesan - so so amazingly tasty!! I made mine with roasted cashews too and I subbed the garlic powder for onion powder as that's what I had on hand. Can't wait to try the others. Thank you so much Ela - I love and appreciate your videos!
Oh my goodness I’m loving this channel. One of the hardest things for me to give up when I went Vegan was cheese. I can’t wait to try some of your cheeses.
One more question.......it say soy or cashew milk. My granddaughter drink almond milk. Should we make these with cashew milk or would her regular brand work?
Hi Ella, I'm not a vegan but ur first recipe was so easy I thought I'd give it a try. I used garlic powder as I didn't find garlic salt. I can't get enough of it! The only thing that bothers me a little is the garlic aftertaste... but then again I put lots of the stuff on my food so no wonder! Thanks for posting this.
Wonderfully presented in such a simple way, I make variations of all of these cheeses, I tend to add fresh herbs as well and friends never believe how easy it is when they try it. I am going to share your video in my groups so they can see for themselves. Thank you!
You can try to find them at your local health food store. Or check and ask at your supermarket. Sometimes they might have it or they don't. Or buy online which would be expensive (but buy in bulk.) Hope this helps.
Johnny Perez They definitely don't have it in supermarkets here unfortunately. Also i've seen things called ''yeast flakes'' in health stores around my area but i have no idea if it's the same thing as nutritional yeast..I read online that there's different kinds.

Very very easy. This makes me want to try it. I always thought it would be expensive to switch over eating healthier. I already changed my diet and we’re eating pretty healthy now, bit i got stuck when i came to cheese, because i looovveee cheese... I didn’t want to stop eating it but like i said, I’m going to give it a try.I hope my family loves it.
It tastes similar to cheese, but not exactly like it. I have been vegan for awhile now so I forget exactly what dairy cheese tastes like, but I remember when I first stopped eating it and tried a substitute I liked it. Try it with an open mind, you may like it for an entirely different reason than you like diary cheese, just don't expect them to taste exactly alike.
+kasandra estes you're like me! I always felt sluggish after eating dairy cheese but still loved the taste - last thing I gave up before going vegan and having been vegan for a few months now I don't have the slightest craving for it :O vegan cheeses, especially like the cashew based one taste better now especially because all they lack is that latcic acid flavor that made me sick... but still have the yummy appeal of cheese flavor if that makes sense :)
+brassic5 I have some non vegan friends who have tried Daiya cheese and they said its cheesier than cow's cheese. I'm going to assume this is sorta like it.. But I haven't tried it yet either.
These all look great! My husband is lactose intolerant and I'm trying for a third time to go vegan. Things like macaroni & cheese and quesadillas are hard to let go though! I will be trying these out, Thanks for sharing ☺
Never buy agaragar from a health food store. They exorbitant the price. Get it from an Asian grocer. They use it in their desserts, and it's as cheap as muck.
Just made the spaghetti cheese, I only used 1 tbsp and it was too salty, I should have known to just use half. This is not a bash on your receipt because maybe the Garlic Salt there is just right. But the one here in the states is mad extra for no reason. But it did give me the mouth feel I needed. I saw this video about 3 weeks ago and I kept it in the back of my mind. Thank you serw (Australia So) much
First video of yours that I'm watching and you have a new subscriber! I've been thinking about going vegan and was looking for some good "cheese" recipes; tried daiya in brick forme and didn't particularly like it. Thanks for the awesome recipes! Would anyone advise going vegan, as well as tips on the process? Good reasons to go vegan? I"m stumped and had read tonnes of biased meat eater comments and newsletters saying how one can't. I've been an omnivore all of my life and need to find a different nutritional path. Advise on veganism would be helpful!
Good and delicious food! I've just tried making some bean burgers with mashed potatoes, oats, chickpea flour, coconut oil and leftover pot of beans. Baked them in a pan lightly covered in coconut oil; they turned out really well! I'm all for good food, saving animals as well as the environment. I'm going vegan full throttle. The horrors of factory farms are harming animals, as well as the environment. Also if everyone went vegan (stretching it a bit and it won't happen overnight, that's for sure) we could eliminate world hunger and halt global warming. Had just gotten all of the animal protein out of my body and hadn't put any into it in a couple of days, feeling better already. As well as all of the ethnic cuisines that are vegan, and the wonderful kitchen experiments. (you can make cream soups with nuts? Yes!!) May be too much, but I feel and oddly enough, smell better. So glad I found this channel and started researching veganism because of it.
That last one looks great...I end up throwing a lot of cheese away because I.live alone & this idea is ideal to make in small quantities freshly to eat. Thanks you're a true kitchen alchemist😃x
The veggie cheese sauce also works well with sweet potato :) made it before and my extremely carnivorous, definitely not vegan friends couldn't tell the difference between it and regular cheese sauce. Yum
Thank you so much, these recipes are easy to make in bulk, pretty cheap and the combination already makes my mouth water.. Do you know anything about fermented vegan cheeses? I guess that's where it would get more difficult.
Thanks so much for sharing! I'm kind of a new vegan (3 months into it) and I can't find any vegan cheese at my grocery stores. this video was really helpful :)
Hi I just make the cheese.. Last one in this video.. Turns out perfect.. Thank you so much I have a question.. Can I freeze this cheese as I can't eat all of that in one go
ah ok, I'm not vegan but I love trying vegan recipes etc. to enlighten myself :) I am hoping to cut out dairy completely and look into dairy alternatives. I also think I may have some lactose intolerance... This 'cheese' looks like a fantastic idea to start off with! Thanks for letting me know that it can be a lot lower in fat than actual cheese. :)
+J Mc thanks, I thought it was like a catalyst like in beer making or does the dame thing as the agar agar powder to the firm cheese. I found out its deactivated and just provides flavor and nutrients, thanks anyways
Inn Daydem I'm not sure but for me I have always just used Olive oil that is what my mom always got the only time I would ever see vegetable oil was in the store
Vegetable oil/ canola oil is actually very healthy. Coconut oil is incredibly unhealthy because of the insane saturated fat content (90%, higher than butter and lard). I think the reason a lot of vegans don't use vegetable oil often is because they assume it's not as healthy as other oils which is really unfortunate. However, there are some legitimate concerns about frying with vegetable oil because apparently it smokes easily and breathing in the vapors can be bad for you. So olive oil is the preferred oil in that case.
Like all Indian "lacto vegetarians", we (my family and I) used to consume milk and other dairy products including cheese with great gusto. Until it dawned on us one day that that wasn't being a vegetarian in the strictest sense. Since that realization, we've succeeded in banishing dairy products from our diet completely, but the loss of cheese hit us hard.😊. We tried the last one and it was brilliant! What a thrill!
Tried the firm cheese and it was absolutely disgusting. Left it in the fridge for about a week and it never firmed up. The nutritional yeast quite literally tastes and smells like fish food. It just tasted like a cold, jellied potato. The other recipes might turn out alright but this one certainly didn't. Bit of a waste of money if you came looking for a cheaper alternative to vegan cheese.
I used my old agar agar powder (it was from 2001!!!) and it still worked so I guess, you must follow the instructions on your package. My cheese was firm (it was nice to see it!!!) however, there is so much agar agar inside, that it tastes a bit of sea weeds. Either it was really too old already or the concentration was too much. I found the taste also a bit too mild so I'm going to experiment again by using a normal potato also and some tapioca starch (maybe half tapioca, half agar agar) to get more elasticity.
I used the flakes (only type I can buy in my country). The packet was from an Asian market so I can't read it. It's really unfortunate because I can't afford vegan cheese, I was really hoping it would work.
flakes are waay different than powder you would probably need twice the amount, grind it up in a coffee grinder if you can, it keeps better and its easier to portion imho, thats probably what went wrong
These are recipes to make your own cheese to your liking. Try making dairy cheese yourself and tell me again the vegan way is hard... Just like dairy cheese, there are plenty of factory made vegan cheese alternatives. It's just that many vegans like to experiment and process their own foods out of simple ingredients for fun, taste, money saving, freshness...
Stacey making their lives harder.......? you mean.... ending their lives...... not making them harder....... did you read what you just typed..............
Why do vegans have to give products with entirely non-animal ingredients the names of animal products? Is it some sort of self-deception? Why not just give those products a new, uniquely vegan name? I don't care if people want to live vegan. I just find it bizarre that they still can't seem to cut off all conections they have with animal products. Vegan Parmesan, vegan cheese. There isn't such a thing. Cheese is made of milk. End of story. :D
***** You didn't have to give me a lecture on why people choose to be vegan. I knew that prior. ;) "Faux" means "fake" or "artificial". Clear name, contains all information you need to know. "Vegan cheese" doesn't. It's a slippery expression. And no, it does not taste of proper cheese. It tastes like fermented nuts. I still find the naming habbit weird, despite your atempt to change my mind. Have a nice day. :)
Oh yeah... the way we name our vegan alternatives are truly "self deceiving", not your animal eating, animals slaughtering and animal torturing. Worry about your own issues regarding that issue instead of what we name the cruelty free alternatives ;) Some people are so funny and obviously in major denial :'D
it should be substitute vegan cheese if anything. I think they call it cheese because many recipes and food call for stuff they can't eat so they make substitutes.
Ah!😭 I've been a vegan for over 2 months now and I miss cheese 🧀. I'm so excited to try these, especially the firm cheese! Agar agar, what a great idea! I have it kicking around (left over from some dessert recipe). Now the time has come for its' usage! Thank you so much for this brilliant idea!

+GaryOakIsMine Veganism is great! I have never felt better ever before in my life!
Yes!!)
May be too much, but I feel and oddly enough, smell better. So glad I found this channel and started researching veganism because of it.
GaryOakIsMine Congratulations and Welcome to the Vegan Community 😊 Much Love and Good Health to You!!
That last one looks great...I end up throwing a lot of cheese away because I.live alone & this idea is ideal to make in small quantities freshly to eat. Thanks you're a true kitchen alchemist😃x
Is it okay to use soy milk?
as long as it's plain anything will do, it just may not be as thick.
The veggie cheese sauce also works well with sweet potato :) made it before and my extremely carnivorous, definitely not vegan friends couldn't tell the difference between it and regular cheese sauce. Yum
I've made the last one, it doesn't taste like cheese. its like a creamy vegetable soup.
it was pretty yummy as a soup! but if you wanna compare it to cheese... it'll be tough.
+Minju B yea, it definitely.needs to ferment a few days in order to taste like cheese.
but didn't the agar make it set? lol
When in doubt, add nutritional yeast
Minju does all of the recipes in this video not taste like cheese?..
Thank you so much, these recipes are easy to make in bulk, pretty cheap and the combination already makes my mouth water.. Do you know anything about fermented vegan cheeses? I guess that's where it would get more difficult.
that is some nice looking vegan gary you got going on there.
I’ve tried two of these already and I love them!!! Thank you so much❤️
has anyone tried these recipes? are they tolerable or is good as it looks?
Your other topics on your channel have inspired me to embrace a total vegan lifestyle beyond food! You have a new subscriber. Thanks for sharing!😊
Thanks so much for sharing! I'm kind of a new vegan (3 months into it) and I can't find any vegan cheese at my grocery stores. this video was really helpful :)
Hi
I just make the cheese.. Last one in this video.. Turns out perfect.. Thank you so much
I have a question.. Can I freeze this cheese as I can't eat all of that in one go
Can I use almond milk for the cheese sauce?
Yea sure
Thank you so much for sharing!! I just love the taste of cheese and I don't want to miss that kind of flavour!
is vegan cheese a lot lower in fat than regular cheese?
Absolutely :)
+Joy E depends on how many cashews you will be consuming as well :P
tilky oh yeah , that's very true which isn't so great for acne depending on the person.
ah ok, I'm not vegan but I love trying vegan recipes etc. to enlighten myself :) I am hoping to cut out dairy completely and look into dairy alternatives. I also think I may have some lactose intolerance... This 'cheese' looks like a fantastic idea to start off with! Thanks for letting me know that it can be a lot lower in fat than actual cheese. :)
Laura Clinton me too, lol its good to be open minded.
I have a question, why would you use nutritional yeast in the parmesean cheese mix
+J Mc thanks, I thought it was like a catalyst like in beer making or does the dame thing as the agar agar powder to the firm cheese. I found out its deactivated and just provides flavor and nutrients, thanks anyways
Does it really taste like cheese or does it only looks like it 😕😞
Ingrid Sorel it just looks like it lol
It does taste like cows cheese !!!😍
I made vegan Parmesan 3 years ago; I stopped being vegan but I always miss it! Its sooooo delicious i add to everything
Can you PLEEEAASE upload your lasagna recipe :)

Ahaha send me one too jk ...unless?

Lol
you blow my mind!!!! and have inspired me all over again!! thanks for all of the amazing recipes! 💖
why do most vegans use coconut or olive oil and rarely use vegetable oil? personnaly i think by using vegetable oil we will avoid extra flavors.
Inn Daydem coconut oil has no flavor and I guess it's "healthier". Olive oil on the other hand is thicker and the flavor is usually why people use it.
Canola oil is apparently very processed and not at all healthy.
Using refined coconut oil maintains the texture/consistency while keeping a neutral taste :-)
*Cries in potato intolerance*
These recipes look great. Cannot wait to try them thank you x
Bit of a waste of money if you came looking for a cheaper alternative to vegan cheese.
aw fuck lmao I was excited :(
did you use cashews? i'm pretty sure it'll firm up if it has cashews
I made the parmesan a few minutes ago, and ate it with my pasta. its soooooooooo good.
Damn she cute
kinda creepy there bud
Thanks for the one without nuts. I recently made some food for a family who cannot have milk or nuts. Great recipes!
vegans..... as if life wasn't hard enough
lol like what do they do to you
???
These are recipes to make your own cheese to your liking. Try making dairy cheese yourself and tell me again the vegan way is hard...
Just like dairy cheese, there are plenty of factory made vegan cheese alternatives. It's just that many vegans like to experiment and process their own foods out of simple ingredients for fun, taste, money saving, freshness...
lol well eating animal products is making the animals' lives harder
Stacey making their lives harder.......? you mean.... ending their lives...... not making them harder....... did you read what you just typed..............
These looks great! Not complicated and I love using potatoes as they are so filling too
Why do vegans have to give products with entirely non-animal ingredients the names of animal products? Is it some sort of self-deception? Why not just give those products a new, uniquely vegan name? I don't care if people want to live vegan. I just find it bizarre that they still can't seem to cut off all conections they have with animal products. Vegan Parmesan, vegan cheese. There isn't such a thing. Cheese is made of milk. End of story. :D

You didn't have to give me a lecture on why people choose to be vegan. I knew that prior. ;)
"Faux" means "fake" or "artificial". Clear name, contains all information you need to know. "Vegan cheese" doesn't. It's a slippery expression. And no, it does not taste of proper cheese. It tastes like fermented nuts. I still find the naming habbit weird, despite your atempt to change my mind. Have a nice day. :)
+Lighter Gait Exactly! You say it perfectly :)
+Lighter Gait Exactly! You say it perfectly :)
Oh yeah... the way we name our vegan alternatives are truly "self deceiving", not your animal eating, animals slaughtering and animal torturing.
