    Stuffed Zucchini Boats: Two Ways
    Ingredients:
    1 Bell Pepper
    2 ears of corn
    1 large tomato
    1 large white or yellow onion
    1 large red onion
    1 extra large zucchinis (or 2-3 regular sized zucchinis)
    1 lb ground beef
    3 tablespoons chili powder
    2 tablespoon cumin
    2 tablespoons coriander
    Set your oven to 350 degrees
    Start by husking the corn, and cooking it in boiling water for 4-6 minutes. Set aside and allow to cool.
    Roughly dice the bell pepper, tomato and onions.
    Cut off the corn kernels.
    Slice your zucchini in half lengthwise. Scoop out the seeds and compost or dispose.
    Coat zucchini in neutral cooking oil, and sprinkle on salt and pepper. Place them skin side up on a baking sheet and roast in the oven for 15-20 minutes (depending on size of zucchini)
    Meat Filling:
    Cook the ground beef in a wide pan. While cooking, add salt and pepper to taste. Sprinkle in 1 tablespoon cumin, 1 tablespoon coriander, and 1.5 tablespoon chili powder.
    When the ground beef is cooked, remove it from the pan and leave the leftover fat in the pan. Cook the white onions in the fat, adding a little bit of salt and oil if needed.
    Once the onions have softened, add the ground beef back in, along with half of the tomatoes.
    Taste the meat mixture and adjust seasonings to your preference. Add a 1/4 cup of water along with additional spices if needed.
    Vegetarian Filling
    Heat up neutral cooking oil in a medium sauce pot. Add in red onions and salt, cook for a few minutes then add in the bell pepper.
    Add 1 tablespoon cumin, 1 tablespoon coriander, and 1.5 tablespoons chili powder.
    Add in the corn and half of the tomatoes.
    Final Steps:
    1. Remove the zucchini from the oven
    2. Fill the boats with the meat mixture or vegetarian filling
    3. Top with herbs, jalapeño slices, or cheese, or serve as is!
