Just bought 1.5 lbs, little over a 1/2 k of zucchini, was going to make your zucchini soup. But I'll make this as it looks great. Most likely will sprinkle Manchego on top.

I'm thinking to make this to go along with the cod recipe from last time, but the one ingredient I'm missing is saffron. Does it lose much flavor if you don't have it?

Zucchini _is_ a vegetable and is also a fruit. That's not mutually exclusive. Vegetable is not some strictly defined scientific term, but the way most people use it does include zucchinis and many other fruits like cucumbers or tomatoes.

funny how so many things called vegetables are actually fruits, from tomatoes to peppers to zucchini and other squash, pretty much anything that is not a leaf, root, or stalk. of course, the distinction between the reproductive part of a plant, the fruit, and the rest (vegetables) is only one way to classify plant parts.
