  • Bakewell Pudding is quite exciting and somewhat shrouded in legend. Originating from Bakewell in Derbyshire, England, this dessert is often confused with Bakewell Tart, but they are distinctly different dishes with unique histories.
    The Bakewell Pudding was created by accident in the early 19th century at the White Horse Inn (later called the Rutland Arms), a local establishment in Bakewell. According to the story, a cook misunderstood instructions and spread the egg and almond paste mixture over the jam instead of mixing it into the pastry dough. The result was a layer of flavoured custard atop a jammy base encased in a puff pastry, which was delicious and popular.
    The cook's precise origins and identity may be unclear, but the dessert quickly caught on and became a regional specialty. Over time, the recipe for Bakewell Pudding was refined and commercialised, especially by the establishment known as the Old Original Bakewell Pudding Shop, which claims to use a traditional recipe.
    Unlike the Bakewell Tart, which typically uses shortcrust pastry and has an added layer of frangipane, the Bakewell Pudding's defining characteristics are its puff pastry base and the layer of almond custard. Both desserts showcase the harmonious combination of almonds and raspberry jam, but the textures and slight variations in composition set them apart.
    Today, Bakewell Pudding remains a beloved treat in Bakewell and beyond, appealing to visitors looking to taste a piece of English culinary history.

    Taking Cooking food back to basics.
    Ingredients:
    - For the pastry:
    - 1 sheet of ready-made puff pastry
    - For the filling:
    - 100 grams (3.5 oz) butter, softened
    - 100 grams (3.5 oz) caster sugar
    - 2 large eggs, beaten
    - 100 grams (3.5 oz) ground almonds
    - 1/2 tsp almond extract
    - 200 grams (7 oz) raspberry jam (or strawberry if preferred)
    Oven to 200°C (400°F, Gas Mark 6).
    Air fryer 180°C (360°F)
    Now I set the time to 25 mins - after 14 mins, I covered the pudding with foil and reduced the temp to 160°C (320°F)
    I used a 8-inch pie tin

    My mother made sveral variations of this when we were all young.
    One she put cake mixinstead of almondflour mixture and the other she used a coconut and eggwhite mixture.
    She would make large trays of these during the winter.

    This looks fantastic . My mom’s side of the family was from a village next to Bakewell. But they came to America in 1844 so that might predate this recipe

    Frangipan is a favourite of mine, we used to get Frangipan pudding at school, it was short crust pastry case filled with Frangipan but no jam on the bottom.
    Talking about cookery accidents, the Tart Tatin is the other classic accident.

    I came here from your “thank you” video dated 3 months ago. I was amazed that your channel has gone up from 50k to 122k since then. 🥳🥳🥳 I like your style of presentation, and the recipes are superb. I check in to drool over the yummy dishes you cook up.     I live in Sheffield about 17 miles from Bakwell I was there on Sunday and from the original Bakewell pudding shop I bought a large one to bring home it lasted until Monday evening, the best version by far. I must try to make my own following your recipe!

    I grew up near Bakewell and have eaten the real Bakewell pudding which looks like this and tastes amazing!! But have never seen a recipe for it so thanks Rik, will definitely try this!

    What are you doing to me Rik?! All my favourite ingredients. It looks absolutely delightful and goes on the list for making soon! I am supposed to be dieting but this HAS to be top of the list… 😂 I shall have to buy some raspberry jam… my home made is raspberry and redcurrant but for this, IMO, it has to be raspberry!

    Hi Ric! Nothing to do with Bakewell pudding, but just needed to share with you how fabulous your Rumbledethumps recipe turned out for me! Over the past few years I have battled dietary issues ending up last year with hospitalization due to blood clots in my colon. For months I have survived on homemade veggie soups puréed for easy digestion. Today I made your recipe of rumbledethumps using gut friendly lactose free butter and cheese and leeks instead of onion. You know when life throws you lemons, one makes lemonade! In my case it’s rumbledethumps! I’m an expat from Lincolnshire ( Yorkshire born) and I love listening to your voice. I’ve lived in Canada over 50 plus years but have never forgotten my roots. Love the old recipes I grew up with ( even if I cannot eat a lot of them!) Congratulations on the success of your channel. You deserve it. For the record, I prefer Cumberland sausages to Lincolnshire one!

    Wow.. I'm drooling.. and I don't even like puff pastry. lol But then I doubt it would look as good without puff pastry. Is ground almond the same as almond flour by any chance? Shirley in NH

      Ground almonds and almond flour are similar but have some differences. Ground almonds, also known as almond meal, are typically made by grinding whole almonds with their skin on, resulting in a coarser texture. Almond flour, on the other hand, is usually made from blanched almonds (almonds without their skins) and is finely ground, giving it a lighter, finer texture suitable for delicate baking needs like macarons or fine pastries.
