I don't understand why you need to leave an empty space to flip into. Once you lift a pancake off the surface, that space is then empty. Why not just flip it into the same cavity?
Hi! It is a recommendation but is definitely not necessary. You can easily flip within the cavity as well 🙂 We like the process and then add batter to the empty well the next round to be sure we get that design.

Me neither. That means you would get a different animal on the other side...

To be honest, My pancakes turn ugly. Fortunately I bought the pan $5 from Goodwill. Not recommended.
