What is the difference between "nuea" and "nuea-sat"? When I look them up in translation apps they both translate as "meat".
After 7 months maybe you had found the answer lol, but to my understanding, “nuea” is just beef, whereas “nuea-sat” encompasses all meat.

does krûeang-nai cover "blood (cube)" as well?
I think those are usually made from curdled pig blood. The closest thing I could find is เลือดหมูก้อน ("leuat muu gawn"). This literally means pieces of pig blood. It can also be made from chicken, duck or goose blood though, so you might have to ask for it without any of those.
เลือดไก่ก้อน - pieces of chicken blood
เลือดเป็ดก้อน - pieces of duck blood
เลือดห่านก้อน - pieces of goose blood

I am always asking in KFC to ไม่ใส่ปีก, but they always think that I say ไม่ใส่พริก 😒 But I blame Thai people, not myself, because Thais are often omitting (or mispronouncing) R in spoken language, and therefore deliberately confusing me and themselves. But in other restaurant I shoud say ใส่พริกครับ, otherwise they will not add it (because I am white) and food will be tasteless.
I think it is not due to the behavior of omitting R. ป and พ have different sounds. พ is aspirated p similar with p in english, while ป is non-aspirated p (english doesnt have this sound). I guessed that you didnt differentiate those two sounds, that’s why thai people thought that you dont want พริก instead of ปีก. Probably you also used wrong tone. ปีก is long vowel low tone, while พริก is short vowel high tone.

The reason they don't understand, it's not about R or not R, it's about pitch and duration.
พริก is high pitch and short duration , ปีก is lower pitch and longer duration
