    家里的菜园种了很多木薯,今天挖一些来做不一样 "蛋香木薯糕"
    木薯大约700克,洗净去皮,刨丝后大约560克。挤出水分,让木薯水沉淀,倒掉黄色苦涩的水。留下淀粉,把它加回去木薯丝里拌均匀。
    再加入280克椰浆,120克细砂糖和¼盐。搅拌均匀后放入锅中稍微翻炒片刻让木薯椰浆糊变浓稠一点。
    剩出来放入8寸的四方蒸盘中,蒸盘要铺上香蕉叶及涂上一层油。刮平表面,放进水滚的锅里大火蒸20分钟。确定锅中足够的水。
    同时,用一个容器打入3粒鸡蛋,加入200克椰浆,120克糖,100克班兰汁,60克面粉和20克玉米淀粉。搅拌均匀,过筛。再倒入平底锅,慢火煮至稍微浓稠,离火备用。
    这时后,木薯也蒸熟了。将蛋糊慢慢倒入木薯糕上面,然后再用中微火蒸15至20分钟,或蒸到蛋糊熟。
    这个步骤不可以用大火,会把蛋糊蒸到发不,表面不光滑而且还会凹凸不平。
    蒸好待冷后才切成块享用。

    I have grown a lot of cassava in my vegetable garden. Today I dug some to make a different "Egg Fragrant Cassava Cake"
    I use about 700 grams of cassava, washed and peeled and I got about 560 grams of shredded. Squeeze out the water, let the cassava water settle, and discard the yellow bitter water. Leave the starch, add it back to the cassava shreds and mix well.
    Then add 280 grams of coconut milk, 120 grams of caster sugar and ¼ salt. After stirring, put it into a pot and stir-fry for a while to make the cassava coconut paste thicker.
    After transfer it in an 8-inch square steaming pan. The pan should be lined with banana leaf and coated with oil. Level the surface, then put it in a boiling steamer and steam for 20 minutes. Make sure there is enough water in the steamer.
    At the same time, beat 3 eggs in a big bowl, add 200 grams of coconut milk, 120 grams of sugar, 100 grams of pandan juice, 60 grams of flour and 20 grams of corn starch. Stir well and sieve then pour the batter into a saucepan and cook on low heat until slightly thickened. Remove from heat and set aside.
    After this time, the cassava is also steamed. Slowly pour the egg batter onto the top of cassava cake, and then steam it on medium-low heat for 15 to 20 minutes, or until the egg batter is cooked.
    Do not use high heat in this step, as the batter will be steamed until it is uneven and surface will not be smoothed.
    After steamed and cooling, cut into pieces and enjoy.

    Your recipe is really very good. Easy to follow and the result has been good. For the sugar I will reduce by 20g for each layer because I found it quite sweet. I have tried three of your recipes and all came out very good. Thank you so much for sharing!

      那个挤压器很好用,只不过洞太大用来挤压椰浆,椰浆还是要过沥。
