BLONDIES RECIPE | healthy, vegan, chickpea blondies
1 15-ounce can chickpeas drained and rinsed
1 cup natural almond butter
1 teaspoon vanilla extract
1/3 cup monk fruit*
1/4 teaspoon kosher salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup chocolate chips*
Instructions
Pre-heat oven to 350 F. Grease an 8×8 baking dish with coconut oil or cooking spray.
Combine chickpeas, peanut butter, monk fruit, salt, baking soda, and baking powder in food processor and pulse until you have a thick batter.
Sprinkle in chocolate chips and gently stir until distributed throughout the batter (the batter will be thick).
Transfer into a prepared baking dish and bake for 25-30 minutes or until fragrant, lightly browned, and set through. Cool completely!
Cut into 9 squares and enjoy.
NOTES
*If you don’t have monk fruit, you can substitute any granulated sugar will work.
**Be sure to buy dairy-free chocolate chips if you want to keep the recipe 100% vegan.
***They will be easier to cut if you chill in the fridge first.

Just wanted to add: For those not familiar with monk fruit sweetener; it is often if not always mixed with xylitol or Erythritol which can be very hard on the digestive tract. They are known to cause bloating, gas, heartburn and even act as a laxative.
I learned this the hard way a few times. .. Maple syrup, coconut sugar and honey for me 😊

I used to use Xylitol as a sweetener and it didn’t really agree with me and the taste was a big compromise too. But since buying Monkfruit mixed with Xylitol and sometimes Stevia, I have no issues and the taste is so much better for me. I need to keep carbs low on a medically supervised diet, hence why I don’t do honey, maple syrup etc.

Chickpea blondies are my favourite! They taste great and are so easy to make in the food processor. It is amazing how versatile chickpeas are! Honestly chickpeas and cauliflower are trying to take over the world 🤣
I made these the other day and substituted monk fruit with honey, almond butter with peanut butter and used dark chocolate chips. It came out amazing but I would recommend to bake it for a little longer cause mine was a little under baked at 30 min so maybe 35-40 min☺️

Thank you for sharing this recipe - the first batch I made last month turned out so good, I made another batch today. I believe I am going to make them regularly because it will eliminate my desire to purchase store-bought energy bars. It is quick, easy and nutritious!
I opted to use maple syrup as my sweetener because I was worried about overheating my magic bullet and needed a liquid sweetener, so everything could easily blend so I put the garbanzo beans and maple syrup and vanilla extract in the bullet and it mixed wonderfully without overheating then I folded everything else in. It was great when I could not find my food processor. This is a great recipe

I just made these…I been back and forth with the vegan lifestyle…but I’m accepting a plant based diet now because I feel so much better was feeling so sick before…the tiredness the mucus buildup the eczema the low libido, the diabetes and hypertension…I just have to be real with myself that I can’t eat what other people eat…I mean I can like with this recipe and fee l confident it’s not going to make me sick.

I just made this last night following your recipe. OMG! I am obsessed with how great it tastes. Even my husband couldn’t keep his hands off it. He could not believe that I didn’t use flour. I was afraid that the monk fruit would leave an after taste, but it didn’t. I also didn’t use as much monk fruit. I don’t really like my deserts too sweet. Thanks Dani

Yum! And what is surprise! I couldn’t conceive that they would come out yummy and delicious. They didn’t taste anything like a garbanzo beans. I used a little maple syrup instead of Monk fruit sweetener, and chopped a little dark unsweetened chocolate in the food processor for the chips. I’ve made many of your recipes, and they always turn out amazing.

Absolute love this! Mine turned out a bit dry and crumbly. I won’t if I dried out the garbanzos too much because I rinse & drained it then didn’t use it right away. Will definitely try it again. Soooo yummy!

That looks great! Never though about using chickpeas for the main layer! I do mine with hazelnuts and almonds and avoid sugar by replacing it with agave.

I substituted the monk fruit sugar with maple syrup 🥰
My food processor broke, i tried the blender but mixture was too thick so i put it in my kitchen aid mixer using the paddle attachment on high and it worked perfectly to get the right consistency. Thanx for the recipe!
