- Cheese is widely used in Pakistan. Different types of cheese are used in households and restaurants in Pakistan but the most common is processed cheese. Original daily cheese is scarce to find in our country. We rely on cheese produced in factories by emulsifying fats and curds of milk. This video is an example of how cheese is made in factories and you can use this method if you want to make your own processed cheese at home. You can use this cheese on pizza and different kinds of sandwiches as well.
In this recipe, I will show you the shortcut recipe for processed cheese.
Ingredients:
Milk 2 Ltrs (Paneer 200gms)
Oil 60gms (1/4cup)
Milk 80ml 1/3(cup)
Salt 1pinch
Baking Soda 5gms
Citric Acid/Tatri 5gms
Vinegar 5tbs

@2:48 - this is NOT paneer. Paneer is created by adding a curdling agent to milk at near boiling temperature. Paneer doesn't melt at high heat. This is Fromage Blanc or Queso Blanco - a white cheese. You can have it as it is and it will melt at high temperatures. The reason why I am posting this is that many people may use paneer to create this recipe snd that won't work. Hope this helps.

I tried it today, It came out super duper perfect, No one blvs that I made cheese home in such low cost. And I tested it in mac nd cheese 🤤 very delicious. I recommend to try it in mac nd cheese.

Well then, you aren't watching the right videos. This process of creating Sodium Citrate has been explained in countless processed cheese making vidoes that are much older than this.

He's not wrong there are a lot move videos detailing sodium citrate. There ate other emulsifiers too but they need to be purchased from a company. You may wanna check how to make vanilla ice cream with GSM and gms..

Edit : so guys i tried this recipe again and guess what, it didn't emulsify when i blended it. I used high power blender but still the ghee (i used desi ghee instead of oil) remained separated from the cheese. Then i got tired of blending again and again so i heated it on double boiler. It started coming together when it was heated 😊 ghee disappeared and beautiful cheese was formed. Set it in a container and voila, great tasting homemade processed cheese was what i got. Used it in burgers and sandwiches.
I highly recommend using ghee instead of oil because then you won't have to freeze it and it will easily set in the refrigerator.
I tried this recipe a month ago with taatri (original recipe called for citric acid) & mine didn't come out well. I thought it was because i used taatri instead of citric acid.
Now after watching your recipe, i'm thinking to give it a try once again.

I have tried making it many times but it takes forever for me to curd the milk(needs so much vinegar). And, when I mix these ingredients together, the end product is like cream not cheesy. Anyone there for help, please?
It becomes perfect if you do not over heat the milk at first step,then after adding vinegar keep stirring untill milk water clears I do not do much procedure only wash it in hot than cold water,and let it freez once then it turns out perfect
