Dough-
All Purpose Flour 500gms
Salt 1tsp or 6gms
Sugar 2tbs or 25gms
Oil 1/4cup or 60gms
Water 200ml or slightly less than a cup
Weight of Dough will be 790-800gms
Weight of Shortening/Butter -Half of the dough or 400gms
Egg for wash

I missed the quantity of butter or puff in the video. A lot of things were running in my mind and I was trying to tell everything to you guys but still I missed the major point. I am sorry for that.
There is a thumb rule for butter or puff and dough quantity for puff pastry. When you finish making the dough, weigh it, use half quantity of butter or puff. For example in this video finished dough will weigh approximately 790-800 grams so I have used 400 grams of butter or puff.
میں ویڈیو میں مکھن یا پف کی مقداربتانا بھول گیا تھا۔ میرے ذہن میں بہت سی باتیں چل رہی تھیں اور میں آپ لوگوں کو سب کچھ بتانے کی کوشش کر رہا تھا لیکن پھر بھی میں نے اہم نکتہ کھو دیا۔ میں اس کے لیے معذرت خواہ ہوں.
پف پیسٹری کے لیے مکھن یا پف اور آٹے کی مقدار کے لیےآسان اصول ہے۔ جب آپ آٹا بنا لیں تو اس کا وزن کریں، آدھی مقدار میں مکھن یا پف استعمال کریں۔ مثال کے طور پر اس ویڈیو میں تیار آٹے کا وزن تقریباً 790-800 گرام ہوگا اس لیے میں نے 400 گرام مکھن یا پف استعمال کیا ہے۔

Hi Afzal, this was possibly the best explained puff pastry i have seen. I have always had trouble with my pastry and have often had to give up due to utter frustration. The bit about room temperature is extremely helpful as most videos are predominantly tuned towards american or european temperature when they dont have the subcontinental temperature variance. Thanks a ton for sharing

One of my favorite recipes.I recommend 1/2 cup water and 1/2 sugar boil until clear. This sugar syrup. After baking is completed, brush on top of pastry . The sweetness and savory taste is a great blend. This idea is from Cuban cuisine 🇨🇺 . Cubans brush this on their pastries.

@KunFoods we also have a cheap oven at home. For even cooking, we rotate the baking tray at half time. We get even cooking on both front and back side every time😊.
