Mr. Nard Dog. Thanks for the Tofu Paprikash recipe. I've never had a paprikash before and now I understand how it got it's name 😁. I'm not vegetarian, but this looked so good, I had to try it (just between you and me, this is the second recipe of yours that I've made). I was NOT disappointed! On the recipe page, someone commented that it tasted too much like flour, but I didn't get that. The roux turned out perfectly. I did a few things differently though. I prepped the tofu the night before, adding the spices and oil to the tofu in a zip top bag, then refrigerated it over night. I don't know if that made a difference, but it was damn good. That got a 5-star rating!

I found out Harissa is a great substitute for tomato paste. The taste is quite different, which I like. I don't like tomatoes or anything that has to do with tomatoes. Great recipes that I will try out.

I like boil my tofu in a salt water, (think pasta water), for 3-5 mins MAXIMUM! More and it'll fall apart. I slightly press it when wrapped up in towel and set my cutting board on it and let it gentle press. Then cut and dredge in cornstarch. The heat and Salt with the gentle pressing firms up the tofu even more. So you need to be so gentle when stir frying it.

Then suddenly all of their attention and eyes turned toward me. I thought to myself "Oh no don't tell me you don't like the food". I come from grandma RIP who was part Hungarian and ate the OG all the time. Trying hard to be soy free so I wouldn’t try it. Although I might try it with one of the other non soy based tofu out there. Looks delicious though.
