Watched this video this weekend. Picked up veggies at the Farmers Market. Signed up for a knife skills class. Took said class last night. Made this tonight. My kitchen looked like a tornado hit it unlike Derek's immaculate kitchen. But the final product was DELICIOUS! Thank you!!!! Out of all the videos that I watch on a daily basis (I'm retired, so I have lots of time), I enjoy yours the most. They are thoughtful recipes that anyone can make and match that with your love of Frankie and this is my happy place!
I wish I had liked vegetables more as a youth too. I did not like meat much. I hated cows milk and cheese. How did I go through life eating the Standard American Diet? I didn't know any better. Fast forward to 2020 when I realize I needed to make changes for better health. Over several months, I went from SAD eating, to adding in lots of veggies, to plant based with cheese, to fully whole food plant exclusive. Each meal is veggie-filled now and I love it. I became a plant eater at 59!
The first thing I got to see in my feed this morning was Frankie lounging on her red blanket. And then a new delicious recipe. Great way to start the day.

5:36 a trick you can do with tofu to toughen it up is simply to freeze it. As the water forms into ice crystals, the bean curd protein consolidates and toughens. The texture can “suffer” a bit as it won’t be quite as smooth as an extra firm tofu, but I actually prefer it this way. To be more specific, it will tend to become a bit more spongelike due to the voids where ice crystals form but it’s not actually tough or chewy, it just holds together better without crumbling.

Today, I made my own version of this dish. I had to change a few ingredients for various reasons, but I followed the procedure as close as I could. This turned out to be a moment where I asked myself "Did this really come out of my kitchen? " It was absolutely delicious! Warning, comforting, seasoned and filling, but not in a food coma way. It's so good and made in a way to get creative as you want with it. This one is staying on the menu! Thank you for sharing this! ✌🏿
Why is the chopping so satisfying with that cleaver? I have learned how to peel ginger with a spoon! Thank you! I also find that I love veggies more the older I grow! A dense bean salad or something with every vegetable possible is now exciting and more enjoyable than, say, an ice cream sundae! I'm getting so many great ideas for keeping my 15 yr old happy with your videos!

I’ve been cooking for many years and have done my time behind the line, and I have never seen anyone (seemingly… as I haven’t tasted any of it) generate so much flavor. There are some great tips here...save the peelings from ginger for tea. Instead of pouring out the water with the bok choy, take it out & put into strainer to avoid just more dirt. Thx.

I like adding half a spoon of bicarbonate of soda (or baking soda… not to be confused with baking powder) to the water in which I rinse vegetables. I leave them in the water for about seven minutes (varies between brands’ packaging) to make sure that harmful substances are removed. Also rubbing in with hands is needed to remove dirt and soil. Micro-residuals of soil will naturally still be present (even ‘sterile’ medical devices are never 100% sterile), but this is actually important for a healthy gut. The more diverse the gut is populated with [healthy] bacteria, the better the gut’s health.

I rarely use salt, especially when using soy sauce, sesame oil and lots of spices. I've also found that potassium chloride can replace salt well in most cases.

I just bought an “extra firm” tofu that was definitely not extra firm. Idk what’s going on. I used miso tofu for this that just happened to be extra firm and worked out very nicely.

SO happy I found you! Here in Hawaii we grow up on vermicelli. My Dad would make lots of broth and add the noodles right in, so it took on the flavor. I do that when I make "chicken long rice'. btw, saimin (ramen) as we call it, is a staple (cheap), that is elevated all kinds of ways. As seniors on a budget my husband (vegan) and I eat lots of it. Mahalo and Aloha from Maui!
I was just reading when and why you went vegan. I am not but love plant based cooking and I go days without meat products. I also stopped having dairy 10 years ago because of asthma. I went off seasonal asthma inhalers at that time and have not needed one since then. I am always encouraging people to look into going dairy free as a way to improve their health including asthma symptoms.

SO happy I found you! Here in Hawaii we grow up on vermicelli. My Dad would make lots of broth and add the noodles right in, so it took on the flavor. I do that when I make "chicken long rice'. btw, saimin (ramen) as we call it, is a staple (cheap), that is elevated all kinds of ways. As seniors on a budget my husband (vegan) and I eat lots of it. I was just reading when and why you went vegan. I am not but love plant based cooking and I go days without meat products. I also stopped having dairy 10 years ago because of asthma. I went off seasonal asthma inhalers at that time and have not needed one since then. I am always encouraging people to look into going dairy free as a way to improve their health including asthma symptoms.

Really appreciate that it is planted based, and how scrumptious with all those yummy veggies, and eggy tofu, delicious! I will have to check out other videos of yours....BUT FIRST, I have to take my dog for a walk.....and it's always a nice touch that you have your dog in the videos, anyone who loves dogs is a good person in my book!
