I honestly love everything about how wholesome their progression has been.
The secret ingredient is probably silken tofu. It adds a creaminess without the extra dairy. That’s probably ask why he had to drain the tofu in the sink before adding it to the smoothie.

I think her secret ingredient is probably yakult or condensed milk. And for her whipped cream she probably stabilized her whip cream with gelatin or they used one of those “non-dairy whip topping base” the ones professional cooks use if you’re working in a hotel or a restaurant that’s too busy and has no time to make whipped cream. Because using whip cream in a can melts really quick. I’m just taking notes, I’m kinda curious bout that smoothie 😝

I’m so glad you are giving (Spoon by H) the love and recognition it deserves. Because what Chef Yoon does with food has shifted my paradigm on what food could be
I think he needed to create his own homemade whip cream because the one he was using is cheap and will melt fast, but if he created his own whipped cream than it wouldn’t melt as fast as it would with just whipped cream from a can
Absolutely. Those spray cans, even the "real cream" ones, make pretty airy (weak) whipped cream. The nitrous cartridge ones used in a restaurant can make a much denser foam, but the cartridges can be pain to find and the unit itself is pricey. If I DIY this glorious thing at home I'll do very stiff whipped heavy cream in a bowl and stabilize it, probably by sweetening with powdered sugar, which contains a little cornstarch (you can also use clear piping gel or gelatin but the powdered sugar is by far the simplest). You can pipe whipped cream from a bag with a star tip for looks & control. Minimize melting by keeping your hands off the bag unless you're piping; if you have hot hands and your cream seems to melt too quickly you can buy a reusable silicone bag or lined cloth one, or double up on the disposable plastic ones/wear gloves for a bit more insulation.

Yes, restaurant hand whipped cream to almost-butter like consistency and chill overnight before putting them into piping bag and i believe we need to use food tweezers to plate those sliced grapes for the superb precision.

Aw man! I'm now really curious what that ingredient is. I've actually made a bunch of stuff from Worth it at home, and this one has been on my list. And right now the world is Petri Dish By C so I can't go to the shop myself. 😭
Also, one thing I would suggest is to use home made whipped cream next time. For anyone looking to do this, the recipe is super simple. You can even do it by hand if you don't have a mixer. Just make sure to freeze your bowl and whisk (or attachment) beforehand. It makes this really stiff whipped cream that holds up under the weight of the topping. I find the canned whipped cream is way too airy and melts really fast.

Can we talk about the whipped cream proportions and the grape stacking? I’d like to start with a lower comment that says nitrogen cream is more dense and doesn’t melt as quickly? Along with homemade whipped cream?
For the stacking, I think the main attraction is the fact that it stacks on top of each additional grape, using the whipped cream as a temporary mold, but when the whipped cream collapses, the grapes should be stacked closer in order to maintain shape and a more “tight-knit” pattern resulting in the grape-flower design, unlike this attempt where it was more just sticking the grapes in the whipped cream and hoping that it sticks in the pattern that Andrew wants. Each layer should serve the purpose of supporting the next layer, as such of a sunflower, or a common rose like structure.
None the less, this is a great attempt, and I’m excited to try this at home.

Why the visual effect of Spoon by H has a much higher impact than Andrew's is because, the grape slices she had over the whipped creams are mostly the tops and bottoms of the grapes, which in turn has the effect of a flower petal (like the closed lotus)
