    I definitely failed making this so many times. Chef Motokichi has that magic touch that is hard to translate through video tutorials, as scene by my many sacrificed eggs.

      It muscle memory. Anyone with a skill does it so much for so long, things become muscle memory, little twitches and adjustments they do subconsciously so they themselves can't explain it.

    Chef Motokichi is truly such a blessing.
    It's just one guy, with lots of passion and he's just enhanced these videos like crazy. He wasn't even in this one and I still fondly remembered those past moments.
