- Big feasting season coming up! Here are my recipes for Pan-Roasted Carrots with Chorizo Nubbins and Sautéed Brussel Sprouts with Sesame. Keep the oven free and get these done on the stovetop.

carla - i just made these carrots. i didn't have any chorizo or pork product so i just used a little more oil and some paprika powder like you said and omg, these were so good!! i loved them. thank you!! ❤
I feel like these would be so good with a scoop of whole greek yogurt, a squeeze of lemon juice, and a drizzle of hot honey. This looks amazing!

Thank you. Love that you always give substitutions for accessory ingredients. I make carrots in a white onion sauce (roux + chicken/veg broth) and I'm not changing that but picking the leaves off of Brussel sprouts is genius! Nothing worse than biting in and getting that spray of cabbage water in your mouth. #ProblemSolved.
Has anyone noticed that Carla's nails are always cute?! The pink color she had in a different video, plus these...I just want to vent my admiration. Back to watching the video :)

Just made the sprouts and added in chopped Thai chilis. Delicious!! Added a bit of heat to something that already tasted great.

if you wanna sacrifice leaf size for time with the sprouts cut them in half, cut out the core on both halves then quarter. they'll come apart easier and it'll save you some time pealing individual leaves.

This is definitely one of my favorite Carla videos. I have watched it a few times and have yet to make the dishes in it (although I definitely will one day and have made many many other recipes of yours lol). I just like it- this video soothes me. Maybe because it’s nontoxic holiday talk that isn’t super corny or fake? Idk, but Carla, you rock!

I've made a dish with this kind of "deleafed" sprouts bevor and while delicious, it's an absolute pain in the ass and your fingertips.
You should try savoy cabbage instead. It has almost the same texture and flavor profile as brussel sprouts, when cut into small nubbins or "fleckerl" as we say in Germany
Wegmans sells Shaved Brussels Sprouts; not exactly the same but will save you the effort.
I don't think Americans give the savoy cabbage enough love. Creamed savoy cabbage is much better than creamed spinach. It's better for cabbage rolls. Even just braised, it's delish. Man, now I want some Schäufele and Wirsing.

Calling on all chef-wannabes out here : do you think adding some fresh herbs to the sautéed Brussel sprouts (like parsley or chive) right before serving could be a good idea?
Don't thimk it will really add anything to the dish. Parsley and cabbage have never gone together in my head. The chives might work well but I probably wouldn't bother.

I gotta ask - why does this video, and so many videos, use the second camera where the person talking is not looking directly into the camera? Why the constant editing back-and-forth between looking into the camera, then a 45° shot, then back again? Who decided this is canon and every video needs to do this, because that person is wrong (imho)

I am sorry but the carrots are burned. First you say they aren't burned then you say the pan got too hot while filming, well which one is it? You can clearly see they are way too burned, especially after adding the water, it is not supposed to be that brown. Why didn't you just redo them? it would have taken 10 min so start over. Sorry but yuck. Also, who in their right mind uses sesame oil to flavor for thanksgiving? Usually a fan but thanks but no thanks.
They're deeply caramelized, I wouldn't call them burned. And sometimes it's good to try new things, even on holidays. To each their own.
