I have found that in America and other western countries, these restaurants would really tone down the spice for non-Chinese people. I‘m from Shanghai and a lot of Shanghaineses are just like me, having zero tolerance with spicy food. When I went to Chongqing last time I had a very bad diarrhea even I demanded food very time with the smallest amount of spice in it. But other than local cuisines, there are still plenty of food without any spice to choose from in Chongqing. But you had to try some local food if you paid all the money for your air tickets and accommodation to get there, right? That's how I got my diarrhea.

But no one in Chongqing would go to Chengdu for the same reason. So judging from that, I think Chongqing hotpot is the better one. That particular eatery is Chongqing Internet famous, may be because most of the cooks are young, handsome guys? The dumplings were great and we were there almost every day during our 8 days stay. We miss Chongqing food, especially the 'small noodles', those dumplings, etc.. Can't wait to go back in April. 😁

those paper looking food is made from sweet potato starch. it is the same thing as sweet potato noddle they put in hot pot.
The gooey and crispy stuff is actually called 烤苕皮 (Kao Shao Pi). it is made from sweet potatoes.
