    I’m a cuban bartender and shake the mojito is like a stab on my ❤, also if you shake it is gonna have a huge dilution. Now, in cuba we use Hierba buena instead of mints because it adds more flavor, also we use sugar instead of simple syrup, it mades the difference. And one last thing, dont put the limes inside, they add bitterness. Thank you again for bring us your content, i really love it. 🎉

    Tried the milk clarification technique on a variant of the original daquiri recipe using 2 oz. Capt. Morgan Private Stock, 1 oz. fresh lime juice, and 0.5 oz. Turbinado syrup. Clarified beautifully with a light golden color. Served in a 5 oz. gold leaf cordial/rocks glass over a small clear ice sphere with a lime wheel garnish. The clarification really mellowed the edges of the citrus and the sugar. More experiments ahead - cheers!

    A question of an amateur: What´s the difference between incolor rum and "yellow" rum? Could be used in this cocktails? Very cool the video!

    • @TrufflesOnTheRocks
      @TrufflesOnTheRocks  3 роки тому +36

      White rum is un aged in wood barrels. The colour of spirits comes from the barrel aging process. I like to say that 100% of the colour and 80% of the taste in spirits come from barrel aging. But be careful, Rum is a tricky category because some "dark rums" or "spiced rums" or even what they call "gold rums" aren't aged and the colour comes from food coloring so you have to be smart when it comes to rum but that's the usual rule of thumb. Cheers!

    Lazy: Actually, I really rate that. Seemed like a good way incorporate all the flavours of a Mojito and create decent dilution in the drink without the need for any bar equipment / crushed ice.
    Pro: This drink would taste BITTER. The way to build a Mojito is to add simple syrup/granulated sugar, squeeze in some lime wedges and muddle. THEN add the mint. When mint is muddled it can create a very bitter flavour that is easily avoided by adding after muddling the lime and sugar together. However, all for experimentation when it comes to different rums and syrups.
    Clarified: Interesting concept. I've never tried Tonka bean before, so would be intrigued to see what that adds to the drink. Presentation wise, looked incredible. However, not sure if any dilution is created and could be quite a strong booze-forward Mojito!
    Something I've always enjoyed on a Mojito is a couple of dashes of angostura bitters at the top of the crushed ice. Looks quite nice as an additional garnish to the drink (kinda like a snow cone if you stack the ice!)

    I've learned recently that "break" the mint inside the glass increases its taste in the drink. So my advice is to break it with the back of a spoon against the side of the cup, bringing the leaves to the top. When you "slap" the mint leaves, a lot of its taste is wasted on your hand.

    it looks amazing, I think you could rince the paper filter with hot water first to remove all the paper taste that might go into the drink, this is practically a rule in the world of coffee, but as the drink is cold I don't think it will extract as much paper taste than doing coffee, just a sugestion

    • @TrufflesOnTheRocks
      @TrufflesOnTheRocks  3 роки тому +2

      Hey Rudy! Thank you! I'm really glad you like our vids! The best way to store clarified cocktails is in the fridge. Even if clarified cocktail are pretty shelf stable, it's always best to keep em in the fridge because if your container is not sterilized, there's always contamination possibilities and cold will prevent that as much as possible. And also, that way, it'll be cold and ready to serve

    • @tristancleary
      @tristancleary 3 роки тому

      Well the main difference was the muddling. Which really is essential... given that mojito means muddled.

    • @iandayang
      @iandayang 3 роки тому

      @@tristancleary But in the “Lazy” version he shook the ingredients. I’m not saying it’s the same as being muddled, but it’s a step that replaces the muddling. My point is, the Lazy version doesn’t seem that “lazy”.

    Tonka is a fascinating, surprising addition. There's so many interesting things you can do with it beyond it's vanilla notes and I'm consistently shocked when I see it pop up in recipes. One bar I know makes a syrup with it and chipotle chillis, like what?

    Love the clear mojito!
    I little "complaint", you should never muddle the mint leaves. By doing that, you lose the fresh herbal flavour, and you get the bitter-pepperish aromas that you don't want in a mojito.

    • @TrufflesOnTheRocks
      @TrufflesOnTheRocks  3 роки тому +3

      Hey Roxy, that's just my opinion and my quite long experience on the matter but if you get bitter and chlorophyle taste when muddling the mint, maybe you're doing it wrong. I always place the mint first and then, add the lime pieces. That way it creates a "cushion" between the leaves and the muddler. So if you muddle "gently" you will only extract the oils and not the unwanted taste. You will also prevent your mint from shredding which is a plus. But again, that's the method I'm comfotable with. If you like the drinks your making the way you make them, that's also the good way. Cheers!

    • @pike666db

      probably not. the rind or peel of some fruits and vegetables is also called a jacket. it's interesting, though, but in Spanish, the word for eggshell is the same as the peel of a fruit or vegetable.

      Bilingual things, he's probably aware that it's not the exact word he's looking for, he later uses husk. The ideas the same though so whatever. My mom uses "heel" of the bread when she means the end of a baguette.
