    Sir, usually I make idly in 4:1 ratio.. just gave this 2:1 ratio a try. Idly was fluffy and soft.. I made it for dinner and had one left over Idly, next morning also softness was retained.

    Ur taking measurements are different..first time i hearing this ratio...we r using ratio 4:1 & soak for 3 hrs only..anyway ur idly became look like soft..definitely we wil try..👍

    Your videos are very excellent. I am a great fan of your videos. I am originally from Coimbatore but settled in Hyderabad, for many years. One point nobody is telling, is which type of idly plate one should use. One without holes (steam cannot pass through) and with holes (steam can pass through the idly). Idlys of the first type are smooth and shiny, whereas in the second type, they have rough surface but puffier and softer. I find that, idly made with plates without holes are like kali (rubbery/slippery). Kindly provide some additional information on this matter. Thank you. 🙏 - I am also looking forward to your video on the secret behind the Coimbatore Annapoorna Hotel Saambhaar and Roast (Long Dosa) recipe.

    எங்க வீட்டு இட்லி Super Soft ஆ இருக்கும் past 15yrs.. துணி போடுற இட்லி பாத்திரம்.
    எங்க வீட்டு Recipe உதயம் இட்லி அரிசி - 8 ஆழாக்கு, உதயம் உருட்ட உளுந்து - 2ஆழாக்கு, வெந்தயம் - 4 Teaspoon.. 2hrs ஊற வச்சா போதும்.

    Dear Bro, Thanks for your help. Most people use idly batter initially for idli and then later say after 2 days, use it for dosa. The consensus ratio is nowadays, as per many youtube mami's, it is 1:3 and adding little flattened rice or poha/aval. Some are suggesting adding chovvarishi or sabu dhana to get the white colour. Your very valid tip is add very little water to urad dal and for rice add more water.
    What is wrong if we add salt while grinding the rice.

    Sir usual ah 4:1 dana poduvom. 4 cups idli rice ku 1 cup ku ulundhu nu. Athaye loose ah mix pani dosa yum poduvum. But nenga 2:1 nu solrapo antha batter ah idli ku mattum dam use pana mudiyuma?

    Hi, when the ingredients list are displayed, it is mentioned as idlirice/parboiled rice. Parboiled rice is puzhungal arisi right, but when you say the instructions, 2 r 3 times you say as pacharisi(which is raw rice). Is that an idli pacharisi? Also, can we use normal rice , which V use for cooking? Thanks for sharing.

      Idly rice is half boiled not raw rice. Puzhangal arisi is boiled even more.
      That is the reason we dont use normal idly rice when we are fasting, instead we use raw rice idly or dosa at fasting time.

    Nice sir I will try so far I used 4 cup rice 1 cup dhal but idli was hard I will try your method but one clarification if it is half ulundhu then for 2 cup rice how much dhal.

    I tried your ratio and it came out well. My idly was a bit hard. I think It may be because of less fermentation hrs (my flour while stirring looked so spongy though) or too much stirring before pouring in the idly thattu or flour is too thick. I will experiment n correct this in the future. I will stick to ur ratio as it has higher protein. Also I took out 10% of the ulundhu flour and made mini bondas. It was oily as the flour had more water but super crispy and so fluffy. In one of the comment I mentioned ulundhu will come around 230g not 250g as I thought.

      Super! Try next time with few correction
      Right fermentation
      Adequate water used for grinding(batter should not be watery or runny)
      Don’t not overmix the batter, mix gently
      And pour half batter in idly thattu so that it will cook well and fluffy! Adding too much batter makes the idly hard! Thank you

      @@chefdeenaskitchen there is another possible reason, some people are not happy unless they steam the idly for 15 minutes. then also idli becomes harder.

    I must say , I tried the exact way you did in video and for the first time my idli have really well.
    I moved to Germany and as I don't know cooking well , it never tasted like what my mom made. But now I follow your videos and I must say Idli came better than my mother's preparation 🙂
    These days it's very common to get cooking videos but not video for making cooking better.
    I would really suggest you to share more videos on giving us tips for improving our cooking. Because more than recopies it's important to know the right way to cook. So I appreciate you for sharing the secrets.

    Followed your instructions. Idli batter rose well. Made idli. Two observations. Were soft. But were flat. Did not rise in the mold like a bun. Why? Also the colour wasn't bright white. I added a small quantity of methi only. Why? Will be thankful for your advice to correct next time.

    Excellent soft but filled idly. Your ratio shows 2:1, but normally many household the ratio is more say 4:1, 3:1 but show soft idly. What is the reason. Secondly in your method I notice Ulundhu is not fully soft but just 80% shows little rava texture but rice is more soft. Please explain your views on it.

    Hlo chef ..some people said ratio should be 1:3 urad dal and rice, you said 1:2 ratio of dal and rice. What will be perfect ratio for the same

    HELLO SIR INNAIKKU INTHA IDLY RECIEPE TRY PANNEN . ACTUALLY ROMBA BAYANTHUTE TRY PANEN. BUT NALLA VANTHURUKKU. THQ SO MUCH.... PAKKUVAM ENNA NA ULUNTHULA THANNI ATHIGAM SERKATHANALA THAN IDLY FLUFFY A VANTHURUKKU. ALREADY NAAN Same way try pannen but flop aagiduchu... ini intha 2:1 ratio la than idlyku poduven.. once again thq sir

      Chef சொல்வதும் சரிதான், நீங்க சொல்வதும் சரிதான்...
      உளுத்தம்பருப்பு சில சமயங்களில் நல்ல பருப்பா இருக்கும் போது மாவு நல்ல வரும்....
      ஆனால் சில நேரங்களில் உழுந்து பழையது ஆகி விட்டால் மாவு அதிகம் வராது.
      அப்போது உளுந்து அதிகம் போட வேண்டும்...
