Aww Onyinye. That's one area I do not know much about. Here in Spain, what my kids and other children take to school everyday is baguette sandwich. They dismiss at 2pm so they take just a simple snack which they eat on the playground during recess. So I'm sorry, I do not have experience with varied school lunches.

You have a new follower in me. I’m making this this weekend with some puff puff and edo. Thank you so much!!!

Doing it this way, and allowing the rice to cool before cooking means that if you only want to cook individual portions, you live alone or are the only who loves Nigerian fried rice, you can freeze the unused rice and only cook a single portion at once. Ideal for me (only one who likes fried rice, daughter and son-in-law prefer jolloff rice) and means I have a the basics of a very fast meal I can cook if I'm running late and want something quick for dinner. This is the first channel I've seen to cook it this way, and it's a method I will be using myself -- though I'll be adding thyme to mine and losing the chicken - in the future. Many thanks. From Dublin, Ireland.

you have simply cooked boiled rice, but not fried. your cooking was boiling method, up till you transferred it unto the mixing bowl, and the rice is already cooked because you demonstrated the texture in your fingertips. what you have prepared, is boiled rice, in the fried vegetable. this is not Nigerian fried rice as well, this is flo chinyere's fried rice. you can only call it Nigerian fried rice if you have evidence or proof recorded. fried rice doesn't have to be yellow because it's loaded with curry, fried rice can still be white, with colourful vegetable. your tick box, controlled recipe,

Nice one! I be dey fo west (ame) naw... house-girl no dey fo here lol, and since getting a wifey is like signing your life away (slavery through the divorce courts/child-support/alimony/transfer of wealth/a$$ets, etc), we have to cook or take the fast-track to the grave by eating very co$tly/unhealthy fast-foods on a daily... I am very hands-on and your directions were clear and simple... I am very photographic, so I typically can do it once I see it done. As such, I can not wait to try this. Thanks for sharing your awesome recipe!!
