white guy here, tried this, for the first time i didnt end up with a sticky mess, but really put the temp low when you do the foil, the steam is an extra source of heat. Mine looked and tasted good and fluffy in the middle but around the sides and bottom the jollof was burned lol, but i think as well i didnt mix it well before adding water and the crispy rice was the most flavorful. Granted I estimated the amount of spices and I burned the rice in the process, it added an amazing smoky flavor that made it taste like special party jollof rice. If you have a wonky electric cooker like mine you’ll probably need to cook the rice for longer at the last stage( it took 35 mins for me) Easiest jollof recipe I’ve encountered. I highly recommend it.

This is the best Jollof recipe I’ve made so far and I will be sticking to this one. I did add half of green bell pepper and substituted one chicken bullion for one shrimp bullion and used chicken quarters instead of turkey. My 15 year old sun has made it today and it was delicious! I helped him with the chicken and instead of frying it , we put it in the airfryer first untill it was crispy and then we fried it shortly in it's own (chicken)oil that was drifting on top of the marinade "broth" after 24 hours sitting in the fridge. I only about a few in mine so not so much spicy, but depending on your spice tolerance level, you can increase or decrease the amount of the scotch bonnet pepper.

Burnt jollof adds a smoky flavour
Jollof burning is normal
absolutely normal, most ghanaian kids fight over who get the burnt jollof at the bottom, after the meal is served 😂😂😂

I found cooking the meat and getting the peppers ready the night before saves lots of time and makes clean up easier

Red rice is rice with stew, I eat it all the time. It is pretty similar to jellof rice
I’ve cooked this so many times perfect each time thank you. Also I put a plastic bag over my lid and over the rice to really keep the steam in to cook
