Thank you very much for posting this on my birthday date 😂
Bcs am still in the village so today I said I will cook this jellof rice, I went to the market and was able to grab few items available bcs there's no bay leaf, no white pepper, no bell peppers and no paprika powder. I used firewood #localfire method to roast my own tomatoes, onion, garlic, fresh paprika, fresh peppers and believe you me it came out perfect like oven roast. I pound it in motta smooth and cooked my jellof rice and it's super delicious
I used carrots and cabbage and onion on my own. The rice was devoured by brother in-law, mother in-law and neighbors and we all enjoyed it
My happiness is that I achieved the roasting part with firewood and it came out so well with good aroma

TIP!...to prevent bake on stains on the baking pan, I would lay aluminum foil down, spray a bit of oil on it. For the garlic, to prevent garlic skin from getting into the blender and have to pick them out, squeeze out the roasted garlic in a bowl and then add to the blender. Looks yummy! and will try this sometime, without the garlic though LOL! Thank you! for sharing this.

Smh…I work with a Nigerian guy cool guy..I’m from Belize and of Garifuna ethnicity and graduated from Belmont in Nashville and he also went to college here at T.S.U. …not the best school..but I remember him bringing this to work and I brought my people dish also and we tried each other’s cultural food and I must say Nigerians food is spicy!!!!! But good. We are good friends and close and try to encourage each other to excel higher in our respected fields because we know we got to be that beacon of hope for our respected cultures. Never embrace that of the American way or culture none of them..even if the people look like us.

Joyful, BAADDEST ! 🔥🔥💖 This is the exact way I cook mine, only difference is I do not add my veggies to the jollof. I make a separate vegetable mix or proper salad and serve on the side.
