Hi, if i want to add coconut as filling, can i use the same ingredients for dough? I am just wondering for this biscuit we have to keep for a few days for it to become softer. But if it's with coconut filling, will the filling turn bad? Thanks
Not sure how long coconut filling will last, as with any food without preservative you need to make them really sweet to extend the shelf live in room temperature, sugar starves bacteria from water they need for growing. Else keep the food refrigerate to keep them fresh longer.

If were to put filling, can advise how many gram of filling vs dough? Lastly, can do the dough ahead at night and put in fridge and take it out the next day to bake? Thanks in advance!!
Low protein flour is cake flour, you can't just replace low protein flour with all-purpose (medium protein), the texture of your baked goods will be different. Replace the 200g low protein flour in this recipe with 175g all-purpose flour and 25g corn starch. Refrigerate the dough overnight should be ok, just wrap with cling wrap and return to room temperature before baking. I have not tried add filling for this recipe, not sure about the ratio of dough vs filling.
Hi. May I know how many gram is your dough? I just tried with 32g using the same temperature and time. They are cracked. Do I need to change the baking time? Mine is “whole piglet” mould.

Weight for each dough depend on your mould, any cookie mould will do, not sure about the size.
Hi, would like to know if don't want add the alkaline water is it ok? Can I only use 80g golden syrup to reduce sweet? TQ
You need alkaline water (lye water/kansui) for the flavour and colour, reducing the golden syrup will affect the result.

May i asked if you use top / bottom heat for the oven? Or you are using convection fan as well?
My oven is convection oven without top/bottom heat. You may try using top/bottom heat.

I haven't tried with air fryer, you may try with lower temperature as air fryer is hotter.
