Also, we noticed you changed the revive system in multiplayer, giving both players a health boost when one revives the other. That mechanic really helped us get further through the dessert area.
To solve your problem of difficulty: -You could take inspiration from idle game as cookie clicker. Where you can at a certain point loose all your progress so that in exchange, you have bonus on the long run. In your game, it’d be a choice taking the form of a temple where you can sacrifice your power up so that you’ll start the next runs with increased stats or a bonus power up. Or maybe simply unlock costume and esthetic changes. This way the player has the choice of taking a risk but earning a lot or take the safe road and keeep his power ups and progress
I'm really happy with the changes to the game in this update. While night encounters felt really good to overcome it often felt like too little difficulty cleared too easily that brought you back to standard difficulty once they were cleared.
I really liked the nigh mode in the open beta. I know that it's not this simple, but maybe you could add back the night mode in a way that's not so sudden, so after like the sinister winds blow 3 times, the next difficulty curve would be the night.

Is there going to be a record page for the perks? I feel like that could be pretty fun to fill out. Plus it would give you a window to view all the perks and what they do.

The difficulty curve in a Roguelike isn't getting harder as you progress quickly. It's actually hardest at the start of the game. When you learn the mechanics of the game and improve, the game gets easier.
The new environment hazards look awesome (especially wind)! Out of curiosity, what sorts of checks do you do before releasing a new patch to make sure there are no bugs?
What about adding “champions” like some other games have, the colorful variants of the binding of Isaac champions, and the blood red of cursed bulletkin. Maybe one could be a monster that is resistant or immune to slowdown.
I hope the player doesn't gradually get more and more bored as they buff themselves more and more, then get overwhelmed in this new sinister wind mode. That's a tricky curve...
Small things: Your game is AWSOME but you could make a few little changes. The sandstorm wind seems a bit radical and also the candles could Light up less as difficultty increases. (Just suggestions and just my opinion)
1:55 well except you find some broken items then a roguelikes difficulty curve can become almost trivial by the end of the run. I agree that the charms where really necessary. Would you consider adding an easy mode for more casual players where the enemy power jumps are a bit smaller?
I know this might come off as knit-picky but could you make the charm art a bit more interesting. I just think that the charms come off as a bit plain. Also I think making their art a bit more different could differentiate them from their stat upgrade cousins.

Im really glad you made this change as before the collectable charms didn't always have an effect in game if you didn't have the right mount
