    LEARN HOW TO MAKE AN EASY SHOYU RAMEN RECIPE TODAY!
    LAY HO MA (how's it going in Cantonese)! The beauty of ramen is that they can be as simplistic or complex as you'd like. Join me in this episode and learn how to make a umami rich soy sauce ramen recipe that's also incredibly easy to put together. Let's begin!
    LIGHT DASHI INGREDIENTS:
    3 dried shiitakes
    6g kombu
    1 large piece garlic
    small piece ginger
    1 tsp black peppercorn
    pinch of salt
    3 1/2 cups water
    LIGHT DASHI DIRECTIONS:
    1. Boil the water in a kettle
    2. Crush the garlic and ginger. Place the ingredients into a large jar or bowl and soak in the hot water for 6-8 hours (or overnight)
    SHOYU RAMEN INGREDIENTS:
    50g fresh shiitakes
    5 slices smoked tofu
    25g broccolini
    drizzle of avocado oil
    90g ramen noodles
    1/2 tbsp soy sauce Correction
    1 tsp maple syrup
    1 tsp dark soy sauce
    splash of toasted sesame oil
    2 tsp scallion ginger oil ( • The Ginger Oil + Rice ... )
    1 tsp black sesame seeds
    SHOYU RAMEN DIRECTIONS:
    1. Pre-heat the oven to 375F and bring a pot of water to boil for the noodles
    2. Remove the end bit of the stalks on the fresh shiitakes and slice the smoked tofu. Place the fresh shiitakes, smoked tofu, and broccolini into a mixing bowl and drizzle over some avocado oil. Toss to coat
    3. Transfer the veggies onto a baking sheet and spread them out. Bake in the oven for 5-7min
    4. Pour the light dashi into a small saucepan and bring to a boil
    5. Boil the ramen noodles to package instructions (in this case, 3min)
    6. Add the soy sauce, maple syrup, dark soy sauce, and toasted sesame oil to the serving bowl and whisk together
    7. When the light dashi comes to a boil, transfer to the serving bowl
    8. When the noodles are done, stain them out and place into the broth. Then, assemble the baked veggie toppings in the serving bowl. Spoon over some scallion ginger oil and sprinkle on some black sesame seeds

    That way of making a broth is 🤯. Opens a new whole method of prepping food for the week.
    For those in the US/Canada who are inclined to buy local, wild Atlantic kombu is becoming more widely available and easily bought online from the farmers.

    Looks amazing! For one or maybe even two servings, may I suggest air frying the vegetables instead of baking them. I often just throw lightly-oiled fresh or even frozen broccoli florets in my air fryer, and a few minutes later they’re lightly browned on the outside, perfect in texture, and delicious. Works for tofu and mushrooms too. I haven’t used my oven in months 😊

    Hello.. Lovely show ❣️ A little tips for the future. When you are going to heat up the dashi, put the noodles in, they will absorb some flavour and bind everything together..

    I have all your cookbooks and love them. It would be super helpful if you note in your episodes if and which of your cookbooks the recipe or parts of the recipe can be found. Not that I don't love going through all the books to find something, it would certainly be helpful. I would be able to note the recipe at the time of the episode if I knew it was not in one of your cookbooks. Your dishes are truly delicious. I don't change a thing.     I am so going to try this, once it gets a little colder here. I have been looking for a simple and easy to make vegan ramen recipe for quite a while now and did not find something, that really was spot on what I was searching for.     Ramen seemed so intimidating to me, even though I’ve been cooking for almost 50 years. Also, I usually don’t have all the ingredients, but watching several of Yeung’s videos I’ve realized that things can be substituted, what matters is keeping the overall profiles of flavors and textures, and most importantly, that it’s not a big deal. I made this today -with some subs and add ons- and it was absolutely delicious. I’m so sincerely thankful for this channel; it has changed the way I approach cooking new things.

    Definitely making this ramen I’ve been looking for easy & not complicated ramen to make at home, must restaurants in Columbus, Ohio want $17.00 for a bowl. Now I can make yours with confidence. Thanks for sharing ❤❤!! Congratulations on your new ramen bowls they are beautiful !!
