just made this today the broth is so delicate and elegant in flavor. I went low on the chili oil only as i wanted something calming and warm for my cold. this soup is absolutely worth to try.

I was born and raised in an African country even though I've lived in the U.S. all of my adult life and creators like you are reminding me that a big part of the world really have mostly vegetarian diets and its not this fad-like thing or trend that tends to happen with most cultural aspects of society here. I am a vegan from Italy (living in Canada now) and some of the best vegan dishes I had tried in Africa was Ethiopian! I was very impressed with how many vegan options they have and how hearty and healthy they were. In Italy vegetarian friendly options were very easy but vegan options growing up was harder. We have so many non meat dishes that contain dairy or eggs. There is a huge surge in Italy of vegans one of the fastest in Europe so now we are getting a lot of veganised versions of traditional foods. If it wasn't for my immigrant friends from Africa, the Middle East and India I probably would have starved 😂
I made this tonight with your most addictive chili sauce - absolutely fantastic! Still haven’t found a store with black soy sauce but I did everything else just as the recipe says and just used more regular soy sauce. This was sooooo good! Thanks for the recipe and your videos.
It's usually light Vs dark soy sauce in Asian stores. Not "black". The dark one gives colour above all. The light is actually the one giving the food the most salty punch.

I made this recipe this evening and it was spectacular!! Perfect for wintry weather. I didnt have kombu so I used dulse and left the pieces in the broth for serving and the broth was creamy and lots of umami I have never tasted a broth like that thank you Wil!! I used gluten free chickpea spaghetti also. I have your ramen noodle cookbook this gives me so much inspiration to delve into more recipes
I just made it with some adjustments, like broccoli instead of Pakchoi, and it was delicious! The use of chili oil and tahini in the sauce it's just a party in your taste buds. Thank you so much!

This looks incredible. I haven’t had ramen in years because there’s no ramen houses near me at all, and I’ve always been disappointed in making it myself. However, as with all your recipes I’ve tried, the result has been top notch. So I can’t wait to try this out.
First time I made ramen following this recipe. I added carrots, enoki mushroom, and soft boiled egg, and substituted mungbean sprouts for the chili threads. Very easy to follow and delicious! I accidentally made my veggie broth too salty but if I fix that, I’m sure it will turn out even better. Thank you 🙌🏻

I haven't had ramen in years honestly. Not since going vegan and gluten free. This recipe looks easy to swap the soy sauce for tamari and pick rice noodles and I'm good to go. I make my own kombu dashi cold brew style every so often, so it's always in the house.
