I make something pretty close to this, Nisha. I add cauliflower florettes, sliced carrots, diamond-chopped red capsicum and cubed potatoes, and sometimes shredded baby spinach. You know, to bulk it up "a bit"! Scrummy-umptious all on it's own, or with rice, chappattis, parottas, naans, even thosais! Sooo versatile, and oh sooo good!

Not only it will heat your body and increase acidity in your stomach, you won't even get as much of it's flavour as you will if you had mixed and fried it in the beginning with other base spices and veggies like here with onions. Garam masala, as the name says ("Garam" in Hindi means "Hot") heats up the body with its spicy and mixed flavour made from the mixture of 36 kinds of different hot spices. Frying it with other aromatics will mix it's rich flavour with the food well and will become easy to digest as well for your body. ❤

Not non-traditional. We make this curry in my region. But instead of coconut milk we grind the grated coconut after roasting with some spices and then add the whole thing to chick pea .

This is certainly inspired by chana masala but it would be inaccurate to call it that. It has several non traditional ingredients like coconut milk, tahini, leafy greens, different spices. My mom makes chana masala regularly and these taste quite different and this version is creamy, where chana masala is more like a thick gravy and tangy.

Its coconut milk, getting the proper stuff means to get the thick one since its more filled with coconut fat, not that the runnier one isn't good to use but it doesn't have that thickening power compared to the thick coconut milk, it also tends to have more flavor but even that can vary from brand to brand

In India we call it chola but coconut milk is not commonly used in chola recipe in India
