    I’m glad that I have become more resistant to the temptation of eating out when I feel stressed and tired. For me, preparing some smoothie mixes, rice, or overnight oats has been a life saver. My wallet and I are truly grateful

      Smoothie mixes would be good. I have all the good things for healthy smoothies but it's a lot of steps each time.

      @@techshabby0001 I defrost bigger frozen fruit chunks in my fridge for a few hours if your blender isn’t very strong. If you buy bananas, freeze them too

    I tried this a couple of weeks ago, and it paid off big yesterday. After a half day of running around, I returned home hungry. Threw the chicken, some cooked brown rice and frozen spinach into a bowl, topped it with grated cheddar, then into the microwave. I had a meal in about 10 minutes. Not fancy but tasty--and definitely better than stopping at a fast-food place. This practice is a total winner. Thank you!

    Been doing something similar to this for ages with chicken thighs. I marinate them chipotle style and use them for burrito bowls, tacos, salads, etc. I like the thighs over breasts for obvious reasons. Either way it's a killer concept that makes easy, tasty, and healthy meals. Slow cooked pork shoulder is another one I keep in portions in the freezer for similar uses 👍 thanks for the vids and tips as always Josh ✌️

      1tsp cumin
      4-6 garlic cloves
      1tsp oregano
      3tsp kosher salt
      1tsp black pepper
      1Tbls chili powder
      2Tbls Olive oil
      1 can chipotle peppers in adobo (7oz?)
      1/2 cup water
      Blend it all up, marinate chicken thighs in it overnight, and enjoy! 👍✌️

    I don’t know why I never thought about doing this. I’ll always have a few days out of the month where I have no meals prepped, and I really hate cooking after coming home from the gym. I’ll be stocking up on extra chicken breast!

    I do this with ground chicken. Cook a few pounds and then freeze in 1lb portions in quart Ziploc freeezer bags. Dinner is a snap since the meat is already cooked

    Oh this is perfect. I’ve been struggling getting my kid to eat protein. All she wants to eat is carbs and fruit(and steak, but do you know how expensive steak is?), which at her age and activity level isn’t the worst thing in the world but still. We’re building healthy eating habits here. I work 10 hr shifts so often she’ll eat before I get off work cause she’s hungry. I can definitely have this ready in the freezer for her to throw on some rice with soy sauce and pickled onions.

    I've been doing something similar for a while now, but I use the sousvide with whole breasts and i break them up after cooking. Makes prep even simpler (longer overall, but less actual handling). I use incredibly basic seasonings (S&P, vinegar for the breakdown, and MSG), it's bland to snack on but can go with anything without introducing its own flavors.

    I love the emphasis on best techniques for prep. Thank you. However, I have really reduced my rice consumption due to its high ARSENIC content. Brown rice, my former favorite, is even higher in arsenic. I use other whole grains like quinoa, bulgur wheat, etc.

    I do this, but with blend shredded chicken. I can had it to asian soup or noodles. Super easy, doesn't even need to be defrost before use. I use your method also.

    I've done something similar with whole breasts seasoned with salt, pepper, onion and garlic powders and coated with oil. After cooking, I've shredded the warm (not cold) with a hand mixer. Will consider this as well.

    If you wet-brine this for 4 hours first, it will be much tastier and stay juicier when you reheat it

      @@coreymckeever3308 you should try freeze dried meal, you can do your own portion of high protein meals, you’ll need to pay for a dehydrator and just a stove, i did that as a calisthenics athlete and hiking lover

    Those bags are hit or miss, I have 2 sets and half of them lost their suction, I won’t buy again, my food had freezer burn.

    Bit the bullet on my already crying wallet and ordered the zwelling vaccum sealer set. I already have a vaccum sealer but I find I don't use it due to it being super inconvenient and I try to use the bags sparingly since I have to cut them open to eat the food. I have so much raw frozen chicken it's time to get it cooked lol

      You can try putting them on some wax freezer paper to freeze! They'll still stick to the paper but they release real easy

      Usually I’ll do overnight just cause it’s easiest. This chicken only took a couple of hours until it was solid.

    Instead of flash freezing on a sheet pan, can I put things in the vacuum bags without taking the air out, let them freeze overnight, and vacuum out the air the next day? Space is limited

    Newbie meal prep question here, but how much longer will the chicken last in this method vs the fridge in lets say a chicken/rice/broccoli bowl? I have been buying pre made meals that I keep in the fridge for less then a week, but looking to save money by making things from scratch. Just trying to figure out if freezer or fridge is best based on weekly cooking

    My freezer ist tiny, wont fit a sheet pan.
    Can I just portion them out in small portions and freeze them then. Will that impact the food safety in any way? I don't mind them clumpimg together

      Yeah you can stack them on something that will fit. I would just put a piece of parchment paper between each layer so they don’t stick together.

    A super easy seasoning for chicken (breast, thighs, whatever) is just the salt and a massaging of gochujang paste!! I find the heat it adds is just enough to be interesting but not overpowering, especially with other ingredients. And it crisps nicely

    This sounds great! I have a question, maybe someone can help me: Does this prevent the bad taste of defrosted chicken? Defrosted chicken used to be horrible, and I had to throw it away all the time...

      I used to freeze chicken all the time and did not have a vacuum sealer, can't say it ever tasted off. Are you sure you cooked it fully, froze it properly and didn't keep it there too long? Maybe you let it omega freezer burn? Without vacuum sealing, you have to eat it before it freezer burns real bad.

      I'm not entirely sure what the bad taste you are talking about is specifically, but Freezer Burn is the result of the cold dry air in the freezer drying out the food. Taking steps to make anything in your freezer air-tight should help with the evaporation going on in the freezer and keep your food tasting normal longer. The vacu-seal bags are probably the best option, but even using zip top bags or containers with tight lids will help a lot, especially if you can get most of the air out.

      What they said -^ but also - aim for a slow-defrost in the fridge instead of microwave. I keep a tupperware with chicken similar to what was shown here in the fridge and when it's finished I pull more out from the freezer - within 24H they taste "fresh out of the fridge" with none of the issues a forced-defrost carries with it.

      Okay, maybe I should let it defrost in the fridge first and set the microwave to max. 50% as mentioned in the video so it doesn't heat up too fast. I read that heating too fast can change the flavor of the chicken.

      ​@@rainerzufall9943 yep, you only want to cook it to an internal temperature of 165f. if you push it up higher than that it gets rubbery and dry. often when you heat it up too fast the surface gets way to hot before the inside is up to temp.
      There are two schools of thought to resolve this: 1st is low and slow to not overcook the outside, second is cut the pieces smaller so the heat doesn't need to penetrate as deep. at 0:50 he shows a decent middle-ground in piece size if your chopping, but if you want to cook a whole piece you might be better off flattening the piece to a uniform thickness for even cooking prior to freezing; 2cm or 3/4 inch is what I do that way I can cook it straight from frozen in a pan.

    I have been doing this for years but I sous vide the chicken which is even easier. No prep at all as the chicken I buy comes in sealed bags. Dump them in the sous vide and a couple hours later, remove and cut up with variations of seasoning or sauces into a few containers.

      No. They are the medium bags. The large bags are gigantic. The ones I use in the videos are medium sized. The large ones are almost too big to fit in a regular freezer when they are filled.

    Disagree, the worst, most time-consuming part of cooking is peeling and chopping all the vegetables. Like a pound of onions and 2 lbs of potatoes for a stew, or all the onions, garlic, ginger,peppers and root vegetables for a stir fry. The rest of the cooking process is simple: put stuff in a pan, wait, stir occasionally.
