duuuude thank you for including the little details! I spent hours last week trying to find what surface temp is good to throw chicken on a pan to cook it well without sticking too bad, and you just casually threw in the 400F number I couldn't find anywhere. I love that you are so detailed in your videos, it really gives me a way deeper understanding of the science of cooking and makes me way more confident in the kitchen. (I'm pretty new to cooking and very new to carbon steel. If you're prepping stuff like this and keeping an eye on your calories/macros, you absolutely have to get a big set of cookie scoops (mine go from about 2tsp to 1/2 cup). Measure out each ingredient, see what cookie scoop is best for the amount you want, and then set up a production line and get consistent portion sizes! It's so much easier than trying to weigh everything or eyeballing it. And bonus, you get to make beautiful even-sized cookies 😂

I made the first chicken wrap and was happy with it.
I enjoyed the ease of creating the za'atar mayo; had everything except for the za'atar seasoning but found it at my local Stater Bros. It was a tasty way to enjoy chicken and veggies (lettuce, tomato).
    *I used spinach wraps.
Trying the chipotle chicken next! Seeing as I already have the chipotles in adobo, and I grabbed more paprika and cayenne when I grabbed the za'arar yesterday.
Thank you for these videos: healthy, easy to make, convenient ingredients (for the most part).

"Un-thaw" means to freeze. Since thaw means to defrost or let come to a temporary above freezing. To "un" thaw would essentially be a double negative meaning to freeze.

My go to quick food is a home made cheeseburger. I just bulk make the patties, freeze them and toss one or two on the little gas grill I have on the balcony. I can go from lighting that little grill to eating in 15 minutes, and it tastes way better than anything you'll get from the McDrivethru. And most of the time I don't bother with a bun. Just a couple slices of sandwich bread or a flatbread is good to go. Just stay the hell away from ketchup or sweet relish since they're full of sugar. I'll usually use mustard or mayo, or my low sugar bbq sauce.

I do a similar prep for chicken, but use Achiote and grapeseed oil instead of mayo (which I think was one of your tips last year) it gives such a deep flavor. I cook up batches, separate into vac bags and freeze them. So easy to whip up a quick, delicious dinner in a few minutes. Thanks for all the tips, Ethan! 👍
Also, if you have some fresh dill or cilantro to muddle into the sour cream, these go from fast and delicious, to *BANGIN!* 😆

I'm so excited to try that chipotle chicken wrap recipe! It reminds me a lot of how I used to do burritos, albeit a bit more dietary conscious which is something I especially need now. When I'm feeling lazy I'll debone a rotisserie chicken, and then marinate with a homemade chili de arbol sauce (just puree dried peppers after rehydrating with water, add apple cider vinegar, and salt to taste) before wrapping and grilling. I'll have to try your chicken recipe and put together some freezer burritos like that. I'm obsessed with chipotle chilis, adobo, and chicken so that's going to be a regular staple for me. Seriously, thank you! I'll have to make a big batch and put them in the freezer

Another challenge for me has been cutting down my sodium consumption for health reasons. It’s harder to get flavorful dishes without salt, and I’ve had to get more creative with spices as a result. I know you’ve underscored the importance of salt in cooking before, but have you considered doing a video on low-sodium cooking? I’ll bet you can come up with some great recipes

Ethan, this was a great video. Your cultural exploration videos are cool, but this is relatable to everyone. I feel the pain of unsatisfying snackage. A handful of almonds and a handful of baby carrots doesn’t seem nearly as satisfying as a snackwrap, and since the macros make sense, why not go for the one that will be far more satisfying? Thanks for reframing snacking for us.
