    I use them in stir frying. They’re amazing, just make sure you don’t put the woody parts in!

    My garlic scapes are not ready yet. Last year I dehydrated them and grinded them up into a find powder to add in leu of garlic powder to dishes. I plan to do it again this year, but I really like the idea of pesto. Thanks!

    I have lots of garlic chives and I'm thinking of making that into a pesto.

    I bet you could freeze in ice cube trays then pop out and put in freezer bags

    they both look delicious! I also saw that Hollar Homestead video and decided I wanted to give Garlic Scape Pesto a try this year. As I have them in my freezer and want to use them up, I think I will add some pine nuts but I think it looks amazing just as you made it. Enjoy!

    I'm about 3 or 4 days from harvesting our garlic scapes. Can't wait. Our favorite way to use basil pesto is on homemade Naan bread, coat with pesto, place beefsteak tomato slices over that and then fresh slices of mozzarella. Bake til cheese melts and then top the entire naan bread pizza with salad from the garden and drizzle a little balsamic vinegar over that. OMG it's so good and refreshing in the summer.

    Amanda, I also saw the video Meg and Ben shared on garlic scape pesto yum. I harvested my scapes and today your video on fermenting the scapes is just what I was looking for 😊
    I am making both right now ❤
    My basil is big enough yet. When it is I am going to make Jess from Roots and Refuge basil tea😊I use my maple syrup from this past season. Delicious 😋

    I saw that video of Meg and Ben's also and thought the same thing about that pesto! I can't remember if I planted hard or soft neck garlic last year, but I'm watching it carefully to see if I get scapes! I am totally going to be making this pesto if I do.

    I make garlic scape pesto every year. The nice thing here up in Quebec is that some years the basil is in abundance around the same time, so I’m able to do garlic scapes with basil in the pesto. AMAZING! A little does go a long way. I end up flash freezing mine in tablespoon size and 2 tablespoon sizes. Then I have a bag of frozen garlic scape pesto available at any time. If I need some garlic/basil in what I’m cooking I just throw in one or 2 pucks. Enjoy your pesto!!

    Scape pesto is good with the addition of basil or arugula, walnuts or another tree nut, and or Parmesan. Your scales go farther then, too!

    I make my garlic into pucks and freeze them. I would do the same here. TY

      Cut your garlic scapes into two inch stems. Place the cut stems into a food processor. Also add lemon juice and equal parts cooking oil and water. Process the garlic scapes into a paste. Using a cookie sheet, place a sheet of parchment paper on the cookie sheet. Place your garlic paste on the parchment paper. Place the cookie sheet and garlic paste in the freezer. 100 minutes into the freeze, take the cookie sheet out of the freezer and cut the garlic paste into squares. Return the garlic paste to the freezer. Freeze for 12 hours. Take the garlic paste out of the freezer. Break the frozen garlic paste into squares. Place the frozen garlic paste squares into food saver bags and vacuum seal them. Stack the freezer bags in your freezer.

    Aww bummer… I freeze dried my onion & Garlic scapes yesterday, cuz I didn’t know what to do with them. I forgot about fermenting them…I wonder if they can still be fermented?? 🤷🏻‍♀️. Great video,I learn so much from you, Thank You!🦋

      It's worth a try...but just do a small test batch so you don't lose them all just in case.

    Great video my scales aren’t ready yet,I made garlic scape salt last year but it seems not to have much flavor now maybe to old after a year
