Best Ramen in summer. The recipe of healthy and tasty Hiyashi chuka.

  • Hello everyone! I'm Ryusei.
    Today I made cold ramen which is called Hiyashi chuka.
    This dish is my favorite summer menu. So I hope you try and enjoy it. Actually it's difficult to make thin omelette beautifully. However I'm sure thin omelette is essential part of Hiyashi chuka. That's why I explained it in detail and twice. If you have any questions, please feel free ask me. And this recipe is typical and you can arrange it. For example, add boiled chicken or chashu instead of ham. Anyway I hope you enjoy it. Especially I recommend it in summer, but I eat it though the season. Thank you!
    Recipe
    ~Sauce~
    Soy sauce   40 grams
    Rice vinegar  40 grams
    Water    20 grams
    Mirin     20 grams
    Sugar    15 grams

    00:54 make a sauce
    01:29 make thin omelettes
    04:56 cut ingredients
    06:26 boil noodle
    07:30 arrange them on a plate
    08:21 ending

    Thanks, it is also very hot in Washington DC at the moment. We have had about 3 weeks of around 36 degrees and over. This will be the perfect dinner for us!

    Another question is about oil. I have at home extra virgin olive oil, organic canola oil, sunflower oil and grape seed oil. Which one to use ?

      I used salad oil ,but you can use canola oil instead of it. I’ve never heard grape seed oil. Thank you!

    Amazing as always, Ryusei-San! The weather in Germany is very ambivalent at the moment. But it will get warmer soon, so I will have to try this then!

    Last question is about your cutting board, what is made from ?

      It’s made in Japan. I bought it in Tokyo, Kappabashi which is famous for kitchen items.

    I have question about the noodle. When I will go to Japanese supermarket, I should look for ramen noodle? I never bought Japanese pasta before. Is it ok to also try this dish with soba noodles ?

      Yes, you can use but I recommend to use ramen noodle to make Hiyashi chuka.
