    If you don't have heavy cream, check your pantry for evaporated milk! I used that and it turned out great!

    Made this in 20 minutes. Using all ingredients except salted butter and cream. I used whatever butter I had in my fridge & milk, still turned out flawless! Thanks for the recipe! :D

      Joel - You used ALL the ingredients except the salted butter and cream? So, this recipe takes 3 ingredients and you managed to come out with a flawless caramel without the use of 2 of them... the salted butter and cream. Damn, you're one good cook. Two thumbs up to you! LoL

    Thank you! I followed step by step and even though my sugar started to crystallize right after boiling and then start to turn color - everything turned out great! Loved the vanilla tip (I used 1tsp bc I love vanilla) thank you !

    Love this recipe. Discovered it about 2 years ago from your UA-cam channel. For me, I have had a lot of problems with the crystalizing of the sugar, but think I have figured out a solution. After I add the water to the sugar, I just let it sit for about 15-30 minutes before starting to heat it up. I don't stir, but just let it sit. That gives the sugar time to start dissolving. After about 15 or so minutes, I turn the heat on and have to stay on watch and will frequently jiggle the pot to keep the sugar moving around. The sugar just seems very fragile in how it reacts to heat, so I just stand watch and move the pot around a lot. That seems to work for me. Super delicious recipe!

    Thank you for making this easy, fast and understandable. We searched for a long time for an EASY way, this was it. Explaining things and putting notes along the way helped to keep us on the right path. We didn’t have to rewind. We’ve made it twice now and Will never spend 3.50 at the store again. 👍

    First of all, I want to say thank you chef. I always wanted to make caramel sauce but found some recipes intimidating. Your recipe made it look so easy that I had to try it today itself even though we are quarantined and couldn't go out to buy the salted butter and cream. I used what I had on hand. Instead of the salted butter, I used margarine and instead of cream I mixed 6 tablespoons of powdered milk in half cup water. It was fabulous, so good, so delicious. And also same texture as yours. My whole family loved it, thanks sir. God bless you.

    Ok so im letting you know right now... Im a baker/cake decorator and I LOVE this recipe. Yes its just a few ingredients, but you dont need a bunch of elaborate things (ingredients) to make a super yummy caramel... Its so smooth and creamy and my go to recipe especially if I'm in a binch for time... Love it!!! Thanks a bunch!!!

    Bake Like A Pro’s Homemade Caramel
    4 T water
    1 C white sugar
    (Lightly Caramelized)
    Remove from heat
    1/3 C chilled salted butter (slows Caramelization) then back on heat
    1/2 C heavy whipping cream mixed 1/2 t vanilla extract (slows Caramelization)
    Remove from heat and bottle at room temperature

    It turned out perfect! I mixed it to melt the butter and it was very sugary but when i added the heavy cream and boiled it on medium while whisking it turned out great, but i had a bit of sugar lumps which i had to break with the wooden spoon. I like how you don't wait until it's an amber colour aka looks burnt but really caramel nice beautiful colour. I love it, tastes amazing.

      +Bunny Star Hi there, I'm really happy to hear that :-) Yes, the caramel changes color so quickly, you really do have to watch it. I do have another caramel video on my UA-cam channel here, that show this in action.... I should have taken it off the heat about 20 seconds earlier, and it became darker than this one, still 100% fine and really good, but the color was a bit dark. Anyway, glad you had success with it. Keep it in a little jar in your fridge and you can keep it for months.... caramel just doesn't go bad. Thanks for watching :-)

      BakeLikeAPro well my sister said it was too sweet but i really like it, i mean if i decrease the sugar, the amount will decrease too right? (and i put 20g of butter less coz i didn't have more) And we don't have here salted butter but I didn't put salt in anyway because that's not really a thing here and I wanted to try it without it first. One recipe said (i think food wishes channel, not sure) that the more the color gets deeper the less sugary and more caramel taste, it becomes, i like it medium but I don't like the red caramel colour, it looks weird) Lol I'm so proud of my caramel :D. It took me about 10,11 min to get the colour I wanted, i didn't wanna go too high or too low. Thanks!

    Hi Suzana, that is totally fine. The great thing about caramel is this - if it is too watery, you can just put it back into your pot and boil it for a minute, this will thicken it. This will remove moisture from the caramel and it will be more thick. IF it is too thick, you can just heat it gently and add a bit of cream to it and stir, and then remove from heat and let it cool. It is a very forgiving caramel sauce. I'm glad you tried it :-)

    Every time I look up caramel sauce recipes I keep getting butterscotch sauces that people CALL caramel, and it never turns out the way I want. This recipe is awesome, thank you.

REAL caramel using butter and cream is hard to fine, that stuff you find in the grocery stores has a lot of fake stuff in it, and you're paying a big $ for it. Once you start making this, you'll never want to buy that cheap stuff from the store again. It truly is magical.     Hi can I put this in a squeeze bottle and put it in the fridge or would that sauce become to thick to squeeze?

      Hi angie 🙂I always keep my home made caramel in the fridge ( it will last for months ) but when I want to use it, I just warm it up. In a squeeze bottle, it will be very thick. Leave it out on counter for few hours, or you can put it into a pan of warm water to quicken the warming of the caramel. Thanks so much for watching angie !

    I do not know what I did wrong. My water & sugar crystalized before it started to turn color, please advise, thank you. However I did melt the sugar, butter, cream till all dissolved and added some baking coco and that was pretty good, no waste. I do want to make the caramel still. Thank you in advance.

      Hi Ann, I'm a bit confused, are you are posting this on the correct video ? There is absolutely *no* cocoa in this recipe. This is a caramel recipe, so I have a feeling you may be posting on the wrong video. If you are on the correct video, I'm not sure why you added cocoa ( powder ? ) to the caramel. If your sugar crystallized before it turned brown, this means your heat was much too high, and the water evaporated. You can fix this easily by just adding more water to the sugar and boiling it at a lower temp. The cocoa thing is still confusing to me so let me know :-)

    Hi, there! I am having a problem with this sauce and need your help. I have stainless steel pots, and am wondering if this is the issue. I set the water and sugar mixture on a pretty low setting for a gentle boil and left it alone. Looked like it was doing well, but it never changed color. I did not stir, however, it went from clear bubbling liquid to crystalized mess. Never turned color, just went from boiling to major crystalization and I had to throw it out. Any advice? Maybe it's the pot and I need to make this in a non-stick one?

      Hi Jamie Lee, I'm going to take a really good stab at this problem and say you did not have enough water in the pot. If you add double the amount of water it really won't matter, - if you try again add double the water, even a bit more if you wish. To me it sounds like there was not enough liquid to get that sugar caramelized and it dried up before it could do that.... if you had not thrown it away, and it had *not* burnt, you could still bring it back to life. Sugar is really easy going in that way. I hope this help you, it really sounds like it was the lack of moisture, water in this case. Next time try at least double the amount of water and a tablespoon more for example, this will work I am sure Jamie Lee.

I put in the recommended amount of water and it dissolved the sugar into a nice clear liquid, and the mixture did boil gently, but turned to solid crystals instead of caramalizing first.       Jaime Lee Garcia That would have been cool to see in a video.... yes in the perfect world :-) I would have liked to have seen what was going on.... it could be also that your heat was too high...... this is *very* possible.... the liquid evaporated so quickly it didn't have a change to change the color of the sugar... by the way, if you find that your sugar is getting this way again, just slowly drip another tablespoon or 2 of water into the pot... there is no harm in doing this, it will not make the caramel bad in any way ( do this if you think the water is evaporating too quickly )

    HI! This is the first video I've watched from you and I really love how it looks! I've tried making caramel sauce before but the sugar burned even before it melts LOL I have 2 questions. I saw that you didn't stir it at all at first when it's just sugar and water. You only gave it a little tilt, right? Will it not burn? And will it keep darkening even after I take it off from the heat? You know, because it's still very hot?

      Hi Sherly, when melting the sugar, always always put water in with it... this helps the sugar...... watch me do it, then try it.... you will get the hang of it. Once you take it off the heat, it will stay about that color, just don't have your heat going at a high setting, keep it lower if you need to, so you have more time.... if the heat is super high, the caramel will continue to get darker until it cools a little ( if you see it boiling when you remove it from the heat )

      sherly stephanie Hi again sherly, if you find it grainy, this usually means you stirred it too much while it was boiling, this causes crystallization of the sugar. You can heat it again, and add a tiny bit of corn syrup, like a few teaspoons, this will help with the reduction of the crystals. You can still do this, just re-heat the caramel... and if it is too thick, just add a bit more cream to it and stir ( and add a little heat )

    I did it AGAIN...for the 3rd time...and just perfect...added a whiff of vanilla this time...cooling, as I speak...and again I will slip it into a GHIRARDELLI plastic bottle and sell it...NNNAAAAA...just joking ! :):):) ...but it tastes that good...and frankly, even a tad better !     @chantal bergeron, sounds like you made fudge :-) If you didn't burn the caramel, you can easily fix it, by adding it back to your pot, add a bit of cream to it, and heat it, you have boiled out too much moisture, that's all you did wrong. Just add moisture to it, and bingo you can bring it back to a liquid caramel.

    Zahrah Catlover Hi Zahrah, you must link your Google Plus page and your UA-cam accounts. Have you noticed that nobody is respondingt to your questions you make on videos ? this is the reason why.... nobody can reply ( there is no reply button ) . To answer your question, if you use brown sugar, you are now making butterscotch and not caramel. Typically, the use of brown sugar make more of a toffee type taste, which we all know as butterscotch. Check my UA-cam channel, I do have a recipe for butter sauce sauce too.       Mona Mtz Hi Mona, make sure the apples are dry when you apply the caramel. This recipe really needs the caramel to be a bit thicker, and you can just boil it for a few minutes longer for it to thicken.

      Great, a friend of mine brought me a bag full of apples and my 4 girls don't really eat them that much so my sister suggested she'd help me make the caramel apples but its so darn expensive at the store I need to make enough for like 10-15 caramel apples.       ok so im not sure what we did wrong,for some reason when i put the butter in the mix, it is not mixing well. the butter has not combined with the sugar, it is visibly noticeably separated from the sugar sauce. not sure what did we do wrong

      After adding the butter it should foam up a bit but then the foam settles and turns into caramel again.

    Does the sauce stay at that consistency after being put in the fridge? I don't care if it becomes thick like a ganache would but I don't want it to become like a taffy caramel.

      +Jessica Angela I encourage you to watch my stages of caramel video here: ua-cam.com/video/_yDn4vEDI0o/v-deo.html ---- in my video I show you exactly what you ask.... you'll see this caramel at different temperatures, and you'll learn quite a bit about caramel and how it is at different temps, cold, room temp and warm. P.S. - this caramel is more of a sauce, so it does not become firm like a caramel you would find a little square that you could just eat like that, this is more for filling chocolate, pouring on ice cream, etc.

      Hi Virginia, LOL :-) It really is good. Once you make homemade caramel, you'll never buy it in a bottle again at your grocery store.

      I'm Australian - we usually boil a tin of Nestlè condensed milk. We don't have access to usual USA products in our supermarkets. BUT...we have TimTams....*snicker*
      Modelling chocolate is hell - no corn syrup unless bought online. We only have glucose syrup.

      Hi Virginia, I don't live near the United States, but these items are available in Australia. To make caramel, you need whipping cream, granulated sugar, butter and some water. Out of these items, what are you saying that you cannot find ? I have friends who live in AU and they find all of these things in their local grocery stores. Condensed milk doesn't taste the same as caramel, it's in the general ballpark, but caramel is much different. You mention glucose syrup, I do not use it in my caramel ( many do, it's a cheater step though which helps reduce / eliminate crystallization ) I'm curious though, out of the items I listed that I used in my recipe, which can you *not* find locally ?

      Yes. I read the ingredients & do already have them. It's a good one to have handy.

    I added raspberry flavour from "LorAnn Gourmet" bakery emulsion, as soon after I added the cream. I took it off the heat, stirred it together fast, then put back on the heat while still stirring. I did this 3 times, it was fantastic and the flavor superb with the raspberry. Thank you for this great recipe!

    So I tried this 3 different times and and twice of the those my sugar crystallized. I recently bought a food scale so my measurements were precise. The trick was to add more water and bring it to a boil so the sugar could dissolve and once it got to a pretty golden color, I took it off the heat and added my softened butter and room temp whipping cream, it came out perfect!
