    Did you know a normal mayo container lid also fits on the mason jars? I keep all my lids when my mayo runs out and repurpose them on my jars 😊

    Freeze the carmel and chocolate sauce in tiny ice cube trays. Just enough for the coffee. Yummy! Looks so good.

    My daughter was making carmel at work, and some spilled on the front of her thigh. She ended up with third-degree burns. It not only went through her pants but also an apron as well. Thankfully, she made a full recovery. You are absolutely correct that it should be made without children or distractions in the kitchen.

      SAME! She is such an inspiration! FYI canning is addicting. You will be looking for things to can! My newest project was taking the leftover pieces from rotisserie chickens and freezing them. When I get 3 I will put them in a crock pot with 4 quarts of water and then simmer all day. Then can the broth for homemade chicken broth! Good luck with your garden! 😊

      @mom2LandM I haven't canned broth, but I have canned up plenty of chicken, ground venison, Pinto beans, potatoes, Black cherries, those are the prettiest thing in a jar, and right now I'm canning diced tomatoes! It is addicting..I have been dehydrating also! I can't afford a freeze dryer..so the dehydrator is gonna have to do 🙂

      She has inspired me the same way but I'm a scared cat when it comes to canning. I want to can my own. Tomato sauce since there won't be much roo. In my freezer with all my freezer meals but afraid I'll screw it up.

      @traceythompson7895 I have done 2 batches, I waterbathed in my electric canner, the only issue I am having is some of the jars are siphoning, they say to leave a half inch headspace which seems so little to me for tomatoes lol...but they all sealed...

      @@ChildOfGod0777 I’m still learning the dehydrator. I purchased a small one that is round. Maybe one day I can upgrade to one with more trays but we all have to start somewhere. Have you done Basil? My dehydrator didn’t come with instructions so I’m trying to figure out the temp and time….

    I see I am not the only one seeing those beautiful flowers in the window behind you. What a wonderful idea to take those green stocks, plant all those flowers in them and then place them on the patio right outside that large window. It is stunning from the dining room and from the patio for outside and inside entertaining!

    My caramel is even easier. Heat the sugar on its own without water, on medium to high heat(quicker), add the butter next when it’s the right colour, saves all that frothing up, then the milk or cream and return to the heat if necessary to thicken it. Easy peasy, but like your friend said - don’t take your eyes off it!

    Remember if anyone makes these sauces let them cool before putting the lids on or they will get condensation inside the jar. Better to let it cool then cap it and put it in the fridge x

    I don't really leave contents often but, I wanted to thank you. I spend a lot of time watching your videos for ideas but also I find you and your channel so wholesome. You inspire me to try my best all the time without creating an atmosphere of perfection and keeping up with the Johnsen's. I also just had my first baby. Also a boy and how much you get done is really a great push for them days when I am just tired but need to get up and do something productive!!

    **Growing Tip:You can take your green onion bottoms/roots, prop them up in a small shallow bowl, add some water to cover them halfway. Place them in a bright window. Change water every few days. They will grow and you can plant them in your garden :)

      Hi there @lotus. 😁 Just wanted to respond to you since I was thinking the same thing when I was watching and we generally don’t get any acknowledgment to comments with everyone being so busy these days. I have been using the same green onions that I started that way in my flower pot on my back porch (off the kitchen) since I planted in January! I feel like it’s a personal challenge now to see how long I can keep these little champs going! Just incredible! My husband puts them in his cottage cheese with salt and pepper. 👍 Have a super day!       I jus put mine in cup from my 1st bunch of onions I got this year, the bigger ones i cut tops off n am drying them n put in fridge to keep on hand,

      If those green onions were store bought or had been in the fridge for an extended period of time, they will think they are on their second year and grow scapes. I let one go to seed, and now have hundreds of green onion seeds from one regrown root.

    When we used copper pans in school we would take a brush with water and gently rub the walls so it would run down to prevent crystallization.

    You can make caramel with just a can of condensed milk a crockpot and water. Take the paper off the can put in crockpot add water over top off can cook on low over night next day you'll have a can of caramel

    Regular sized peanut butter lids fit perfectly on mason jars. If you go through a lot of peanut butter then you are all set. for reusable lids.

    One tip: Spray your measuring cup with Butter Spray so the Cream will pour out easily.
    Just had an Idea: Leave a little more Carmel Sauce in your pan next time. Let cool, but still liquid enough to spoon & drop.
    Drop by small spoonfuls on to a frozen cookie sheet, & freeze. You can have Frozen Carmel Coins when you want a treat.

    I'm 33. Growing up my mom taught me how to make candy by testing it in cold water. I was initially excited to get a candy thermometer, but it's seriously useless junk in my kitchen. Once you master candy making, family movie nights with candied popcorn it really easy. My kids always ask for specific colors

    I make salted caramel sauce with just canned coconut milk , brown sugar, salt and vanilla. Let coconut milk and brown sugar simmer till thick. Take off heat and add salt and vanilla. That’s it! Soooooo good! Use on deserts and to make the best iced coffees. ❤
    (Full fat coconut milk. The new Azure coconut milk works amazingly for this recipe!)

    My husband makes me cold brew in the French press. He just grinds the beans, puts them in the French press with cold water, and puts it in the fridge overnight. The next morning when I wake up I just push the plunger down and enjoy my cold brew!

    For anyone watching this video way after it was posted- I can confirm that I’ve made this salted Caramel several times and even tho I had never made caramel before- it came out perfect the first time and every time I’ve made it since then! I’ve literally never had any issues before until tonight and here’s where I messed up.
    My pot was already scorching hot when I added the ingredients because I had just cooked several things on the stove, then washed the dishes and put my pot back on the burner that was still super hot.
    So be sure to add the sugar, water and corn syrup into a barely warm pot and then crank the heat up a little so it gradually heats up together instead of scorching from the pot being too hot when adding the sugar

    If anyone is interested tootsie rolls are just chocolate caramels so if you make the caramel to chewy temp and add chocolate you can cut up homemade tootsie rolls or chunks to put them in cookies!

    When I make caramel sauce I never add the water when cooking down the sugar, it's a bit more tricky and you really have to watch the sugar like a hawk because when it starts to melt it can burn really quickly, but I found each time I used water to cook down the sugar I just get huge sugar crystal that are super hard to melt. Also never use anything metal to stir with it'll mess up the temp, just use wood or silicone

    I've been using those lids for years. When I gift my homemade garden salsa, I put one of these lids in a baggie and tie to jar with twine/ribbon. Always appreciated as much as the salsa.😊

    Lids: you can also use mayo lids and 16 oz peanut butter lids and they fit in mason jars!!! once I open a jar, I'll reuse the PB jars while the jar is in use/ in the fridge.

    I don't like coffee... but that looked good! I've got to get some of those lids too! I recently FINALLY got all the pasta, grains, baking essentials and just all the stuff into jars. Some are canning jars, some are older jars... different sizes and types. I love it! I've learned that if I like a jar but the lid isn't silver I can simply spray paint it my color! Easy! I've even reused jars from pasta sauce. Alot of them have measurement markings on the side. I'm loving my clean, neat, shiny glass kitchen!!!

    The dutch use wax paper to wrap cheese so the bees wax cloth is spot on as a good wrapper for cheese.

    You should have a designated knife for onions, the "juice " of the onion dulls the knife blade. Most of my knives have a dark handle so I got a knife with white handle just for onions. It only requires a quick rinse.

    Becky, every time you looked up at the camera while tasting the caramel sauce l had to laugh. Your eyes give you away! I have never made caramel but l think l can after watching you do it.

      It’s such a great ingredient to have on hand, it’s always in my fridge for an emergency! Hahaha! Cake filling between the layers, icing ingredient(caramel buttercream), ice cream topper OR ice cream flavouring ex. Just plain Caramel ice cream or chocolate caramel swirl with peanuts or vanilla caramel swirl with canned apple pie filling chopped up in little pieces …………sigh. Sorry, I got carried away. I have to go get something going in the kitchen now! Hahaha. Have a great day! Sorry for rambling! 👍

    Making your own chocolate syrup and caramel sauce does tastes better than store bought! Your are correct that they freeze wonderfully. I freeze both in 1/2 pint jars for ice cream sauce etc or have on hand for a quick gift. I use the recipes from Alton Brown's Chocolate Sauce and Bobby Flay's Caramel sauce, both are super easy.

    Caramel sauce is made with white sugar and butterscotch is made with brown sugar. Just like broth is made with the meat and possibly skin and stock is made with bones and possibly the meat and skin.

    I’ve heard that you can put a can of condensed milk into a crockpot full of water on high overbite and it turns into Carmel. I’ve been meaning to try it.

      That's actually dulce de leche which is similar to caramel but made differently.

    Try 59/50 heavy cream whipped snd marshmallow fluff. Whip cream, the whip in the marshmallow fluff, i use my emulsion blender… top snd bottom your cold brew… omg additive!!!

    You should consider getting a milk frother. SO much less work and washing up than using the blender. I have a warming milk frothers and absolutely LOVE it. One of the best kitchen gadgets I own. It froths regular milk very well. I'm not into gadgets, but this is a good exception.
