    * The caramel is VERY hot, so be careful when you make it!! - When I was a student, a teacher warned us not to touch the caramel, and guess what I did lol I couldn't resist! My finger was fine but please don't!

    This is a brilliant video giving the viewers a choice in how you want your caramel for desserts, with or without butter, liquidy or more firm. Don't forget to give this lady a THUMBS UP for all her efforts. It takes many man hours to put a video like this together, and the least we can do is pay her back with a THUMBS UP!!!     Thanks so much for this tutorial! I made dry caramel for the first time a few days ago and it was a disaster, but now I understand how to stop it from burning and crystallizing. I think I had the heat too high and I kept stirring it outwards.
    You give really good advice and tips for making the caramel and your voice is very relaxing to listen to. Thank you again and good luck with everything you do!

    Aya !!....It never occurred to me to pre heat the cream. Outstanding idea. I've always made caramel sauce using white sugar and only cream as an extension of making inverted-sugar syrup which is like the wet recipe you showed, and then using brown sugar, the cream, and the butter to make butterscotch (the flavors are very similar but ARE different. I use more butter than you and the extra water in the additional butter loosens the sauce up a bit). But the addition of the cream to halt the caramelization was always a nerve wracking time to keep things fluid and not have it spit all over me. Heating the cream is brilliant. Thanks a bunch! (Make yourself a caramel or butterscotch cheesecake [replace half the sugar with 2/3 equivalent caramel sauce and add 1t of starch to compensate for the extra moisture] and you will thank me.) Great video.

    What a great and thorough video! Thank you so much. I made caramel for Turtles candy for Christmas on Sunday and it called for sweetened condensed milk. It turned out amazingly well, I was so pleased, especially since we can’t buy turtle candy here.I’ve only made caramel very few times before and haven’t tried the dry method yet.

    Excellent video with great explanations! I really love that you give us signs that note the changes that are happening, so it's easier to know when your caramel hits a certain stage. The comparisons at the end are also fantastic 👍🏻
    I'm dying to make this right now, but all I have is light brown sugar. Can you make it with brown sugar?

    Tip pastry brush dipped in water to brush around sides avoids sticking and burning.
    Also no need to warm cream just whisk vigorously until blended 👍

      My pleasure! Store it in a fridge in an air-tight container for up to 2 weeks. (I recommend consuming it sooner for the best taste) You can also freeze it for up to a few months.

      You can store in a fridge for up to 2 weeks or about 3 months in a freezer!

    Very well done video and thank you for the comparisons. I have always hesitated to add just sugar to a pan and turn on the heat-- I have always been sure it would scorch my pan and ruin it. Now I understand how to control it. I do have one question. All the recipes for caramel require heavy cream. But I have to avoid fat as much as I can. Is it possible to make this with fat-free milk?

    It`s amazing! 👍🤗 I love caramel ! There are many differences in caramel.
    It changes depending on whether you add water or not, whether you add butter or not!!
    I understood well the point of how to mixing, and I also understood difference between lighter caramei and darker caramel.
    The four types of comparison videos were easy to understand and interesting!
    I have high hopes for the future ✌😍
