* The caramel is VERY hot, so be careful when you make it!! - When I was a student, a teacher warned us not to touch the caramel, and guess what I did lol I couldn't resist! My finger was fine but please don't!
By the way! According to UA-cam, this is my 100th video🥰💕💕 Thank you so much for being here, I can’t believe it took almost 3 years!? That’s too long😅 When I started UA-cam, I decided myself to at least post 100 videos to decide anything. So I feel a small accomplishment today (I need a wine tonight🍷) Although it’s just a number, I want to thank you for sticking with me for a long time. And welcome if you are new here!🙌🏻 I hope to continue sharing helpful contents😉
This is a brilliant video giving the viewers a choice in how you want your caramel for desserts, with or without butter, liquidy or more firm. Don't forget to give this lady a THUMBS UP for all her efforts. It takes many man hours to put a video like this together, and the least we can do is pay her back with a THUMBS UP!!! For me, now I must see her other videos that she masterfully put together. THUMBS UP!!!
Thank you for taking The meticulous time and energy to make all these different caramels and show them to us side-by-side. I cannot explain how incredibly helpful that is. I will be returning to this video time and time again.
Really nice video! I especially like all of the comparison segments, those are really useful. Tried making the dry variant with butter today and it turned out great. Thanks for your work!
Dear Aya, I just tried your recipe and after the second attempt I finally made my own caramel sauce. I've always failed all this time and this is my first success, I'm so happy 😭 thank you so much for your work ❤🎉
Thanks so much for this tutorial! I made dry caramel for the first time a few days ago and it was a disaster, but now I understand how to stop it from burning and crystallizing. I think I had the heat too high and I kept stirring it outwards. You give really good advice and tips for making the caramel and your voice is very relaxing to listen to. Thank you again and good luck with everything you do!
Best caramel making thing I've seen. The comparisons are perfect to show what to do to get what you want from something that is so simple yet so complex.
I love your video. You detailed everything. With different n methods. Thank you so much. My first time making it with baked apples with cinnamon. It was delicious. I tried the dry method. I watched another video before I came across yours. It wasn't as detailed as yours. Now I will use your methods next round. ❤❤❤
Aya !!....It never occurred to me to pre heat the cream. Outstanding idea. I've always made caramel sauce using white sugar and only cream as an extension of making inverted-sugar syrup which is like the wet recipe you showed, and then using brown sugar, the cream, and the butter to make butterscotch (the flavors are very similar but ARE different. I use more butter than you and the extra water in the additional butter loosens the sauce up a bit). But the addition of the cream to halt the caramelization was always a nerve wracking time to keep things fluid and not have it spit all over me. Heating the cream is brilliant. Thanks a bunch! (Make yourself a caramel or butterscotch cheesecake [replace half the sugar with 2/3 equivalent caramel sauce and add 1t of starch to compensate for the extra moisture] and you will thank me.) Great video.
My pleasure! I'm drooling about the butterscotch cheesecake with caramel sauce...! Sounds divine!!! I'm so glad it was helpful for you😊 Thank you James🙏
What a great and thorough video! Thank you so much. I made caramel for Turtles candy for Christmas on Sunday and it called for sweetened condensed milk. It turned out amazingly well, I was so pleased, especially since we can’t buy turtle candy here.I’ve only made caramel very few times before and haven’t tried the dry method yet.
I just want to say thank you for all of your hard work. This is really a no nonsense approach to making caramel sauce. I like that you showed the process up close. Thank you again for such an informative video.
This is absolutely the best tutorial I have seen or read on making caramel. Your comments are so concise and informative at just the right time. I burned two batches of caramel today and then I watched you video. My dark caramel sauce is PERFECT! Thank you so much!❤
Thank you so much. I also have been very confused about which way to do it. You made it so simple and seeing every step makes me willing to try. Thank You.
Excellent video with great explanations! I really love that you give us signs that note the changes that are happening, so it's easier to know when your caramel hits a certain stage. The comparisons at the end are also fantastic 👍🏻 I'm dying to make this right now, but all I have is light brown sugar. Can you make it with brown sugar?
I have now watched a few of your posts and really enjoyed them. Your teaching style is so informative and easy to watch and follow. I am now subscribed and looking forward to following and learning. Thank you so much. Trish from Australia.
Thank you soo much for the details and the comparisons of each one. This video is the best one for sure. I'm going to try. If I want the sauce a thinner, do I add more cream? I would like to use it for coffee drinks and apple slice dip
Wow! I think this is one of the best instructional videos I have ever watched, and I watch a lot of them. You give the information in very easy to understand directions and tips to make a better product also. Thank you so much can’t wait to dive into your other videos 😁. Excellent video.
Probably the most complete caramel sauce video i've ever watched! Are there videos about the hard caramel and chewy caramel? I can't find them in the channel!
Aya, can you please teach us how to make chewy caramel for Christmas gifts? And thank you so much for the receipts, I live in Brazil and I make your Christmas cookies every year ❤

This is a wonderful, detailed video. I had no idea there are so many ways to make caramel sauce. It gives me confidence to try making it at home. Thank you!!
Very well done video and thank you for the comparisons. I have always hesitated to add just sugar to a pan and turn on the heat-- I have always been sure it would scorch my pan and ruin it. Now I understand how to control it. I do have one question. All the recipes for caramel require heavy cream. But I have to avoid fat as much as I can. Is it possible to make this with fat-free milk?
WONDERFUL VIDEO!!! Which one of these methods would be the best for using in your coffee? Would it be correct to say that the ones with heavy cream are Dulce De Leche? Again, very informative and great video!!!
Thank you for this new perspective on making caramel! If I need to make more can I just double the recipe? Or should I stick to doing the recipe 2 times?
Congrats on your memorable 100th video👏🥰 100 times in 3 years…One every 10 days…You used to make it while you were working… It`s amazing! 👍🤗 I love caramel ! There are many differences in caramel. Thank you! I am guessing caramel sauce might get darker with it because of the impurities. It was so with brown sugar. I hope you share your experience with us if you give it a shot sometime!

Hi
May I used whipping cream instead of heavy cream. I can't find heavy cream in my country.
Congrats on your 100th video!❤️
Live and Let Live Yes you can! & Thank you!💃🙌
Can you use half and half
Can you rewarm it
Is there any explanation as to why the wet caramel looks darker?

can you use cane sugar
Hi, If I want to use Caramel as an insert in an entremet using Pectin NH or Agar Agar, which method should I choose and at what point shld I add them?
Wow! So thorough!!!
Which way is the best for filling cupcakes and cakes?? I accept all recommendations lol🌸🌸
You can use whichever you find easier to make since the result is very very similar!
… this was a great presentation ! … can raw organic sugar to used the same way ?
Thank you! I am guessing caramel sauce might get darker with it because of the impurities. It was so with brown sugar. I hope you share your experience with us if you give it a shot sometime!
Thank you Aya! I wonder, can I use this as cake filling for a layered cake?
Yes you can!
