    Tried it and it turned out so so good!!! Nobody could believe that I made it for the first time! 😅
    I didn't thicken it too much, I wanted it's consistency to be a little sauce like :)

    This is exactly the way my mother used to make it! She used carnation milk and a cast iron skillet. I'm SO glad to see someone make it "dark" like hers.

      @@cyndeeratledge3093 My mother could work miracles with Carnation evaporated milk. It's the best brand of its type.
      When I was too young to drink black tea, she made a sweetened hot drink for me that tasted almost like it. So much so that I often asked for "tea-milk".

By the way do not let the amount of water I used in that much older video confuse you - the amount of water in this new video has been increased, just so beginners don't burn their caramel.     I made this recipe last night so I could make a caramel mousse and OMG! It was amazing! 🤤🤤🤤 I didn’t get it as brown as you did but it tastes so good. Thank you so much for this tutorial😊

    I tried this. At first, everything went well. But at the end, the sugar become crystalize. I go on with the process, add the cold butter and cream, then stir on low heat. The sugar crystalize dissolve. Thank god, and before i store in the glass jar, i sift the caramel to make it silky smooth. Thank you! The taste are amazingly good!

    wow thanks for the video man, that's a really clear instruction you gave there. I know that making caramel sauce is really tricky and i even burnt my equipment when i tried it. I'm just wondering does it also taste good for coffee?

    I've made caramel for MANY years and only had one batch that seized up on me and of course it had to happen when all eyes were on me as if waiting for me to fail. Since that day I decided to never stir the pot until it's time to add butter and cream. You do make it look easy and your instructions are easy to follow. Have you ever tried making it vegan? I've had lots of people ask me about it but I usually just laugh and move on.

    Just fyi, I had an instructor in school give a little tip. You can use a brush dipped in water to wash down any sugar that gets splashed up the sides of the pan as it cooks. Awesome video!

      Yup it's a great trick. I talk about this in some of my other caramel videos. You can also add some water to the caramel ( a tiny bit ) or brush down the sides, and put a lid on the pot, this works extremely well. It basically creates a steam bath and dissolves down all sugar crystals. Give it a try next time, you'll be impressed. Thanks for visiting my channel Nick ! 😁 I appreciate it ! 👍

      ***** Hi Lee :-) ah thanks :-) I may even do this video again and make a very light colored caramel sauce for those who want it super light, I like it like this, but I may just do another video some day. I'm glad you enjoyed it. Yes, real time is good, because you can see how it goes during the cooking process... as you see you don't need a high heat.... a lot of people burn their caramel because their heat is much too high. Patience is required and a bit of love. You can do it, believe me :-)

    I've never wanted to come through a video and eat the product more than I did here. I want it!
    I liked the color of the last one better, but I know why this one was darker. You were trying to show us the color after the sugar and water step cooled, causing yours to actually cook longer. Had you went straight to putting the butter and cream in, it would've been perfection 😀 I can't wait to make this tomorrow. I'm making a Caramel Apple Pie, with this in my filling and drizzled on top. I can't wait 😀 Thanks so much for the video. Your awesome!

      +Jerilynn86 haha ! I like the sound of that LOL. Yes the caramel changes color so fast.. you have to watch it.... just 15 seconds and bingo it's already darker than you may have wanted it. When NOT filming, things always go better...     You explained the recipe perfectly! The first time I ever tried to make caramel (not your recipe), it turned into a big glob, lol. Aside from the sugar crystalizing a bit on the bottom on this one, the caramel came out delicious. Thank you!!

    I almost never have crystallization issues when I do Italian meringue buttercream with nearly the same measurements of sugar and water, but I tried making wet method caramel sauce 5 times and every time the sugar crystallized. Never stirred or anything. I think it boils too slowly and leaves too much time for things to screw up. Did the dry method once and it was pretty much perfection. I might try wet method one more time, but I will not do it on low or slow. I don't do IMB slowly.

    Can't wait to try this. So glad you didn't use a thermometer.. I don't have one. Wondering if it would work with evaporated milk .. will check the MF percent.

      +Cathy L. Hi Cathy, yes it would work with evaporated milk, but there's no need to add extra expense to the recipe. If you don't have cream, then sure, use the evaporated milk. You can use milk too, but it won't be anywhere as nice. I hope this helps and thank you for watching, I appreciate it !

    Today was my second attempt. First time was a cystallized mess! This time I did it over low heat on my gas stove and covered the pot with a lid to prevent crystallization and uncovered once all the water had evaporated and it turned out great!

      Hi Jade, I saw your comment the other day, either yesterday or the day before, I don't know if I answered it. This time I will stop what I'm doing and answer before I forget. Yes ! I talk about covering the pot if you find you are getting crystals ! so glad you tried that and it worked for you ! The steam basically battles the crystals and always wins. It takes a few times, but you will get it perfect. Caramel sometimes isn't the easiest thing to do, sometimes somebody will get it the first time, others ... it may take 3 times to start to feel it. Really glad you tried again and did not give up Jade !! 🙂

    I love caramel sauce I tried to make it and also tried it whith powered suger but you'res looks great I and easy great explanation and the ingredients and step by step great work I was just wondering if you put it in refrigerator would the caramel get hard I love to drizzle over cake can I do that thank you one of the best

    Super tutorial. It's the sugar that's giving the caramel color as it caramelizes. I think I'm right in saying that. I would have thought there would be coloring, cocoa or chocolate required in this recipe, There isn't.

      stunninglad1 Hi there, yes that's correct, it is the heating of the sugar and water which gives caramel or butterscotch its color and flavor. Very simple to make if you take your time and don't overheat the mixture. Being gentle and some patience is needed, but you'll make an amazing caramel. Thank you for watching !

    I tried your recipe today. And omg the taste of this caramel is to die for. But, my caramel was lighter and not as thick. I don't know where I went wrong. I will try again. And yes it went good with my cheesecake. Thanks for the recipe.

      Hi Lisa, glad you tried it out, and super happy that you had success ! The color of caramel depends on how high your heat it. The great thing about caramel is you can go back later on and tweak it if you wish. You can add it back to your pot, add a bit of water and start boiling it again.... be careful, you can easily get the color super dark within just minutes. I suggest adding the water because you may burn the caramel if you try it just heating the caramel on its own. I'm glad you had success ! Makes me happy hearing that Lisa !

    I just tried this recipe and it is perfect!!! which is weird, because any form of candy making is near impossible in the Caribbeans humid weather... but this is incredible. Great Job x

    thanks for the great recipe and tasted good but when i added cream it turned into very small cheesy bits. it is happening every time i am making this sauce. Do not know what wrong i am doing. please help

      +Punit Gupta This to me sounds like your caramel was not hot enough, and your cream was super cold. This is what will happen, the caramel gets shocked and does this. If you apply a little bit of heat to the mixture, it will all come back together and be totally fine. If you wish also, add a tablespoon of water ( 15 ml ) and slowly heat the caramel.... it will come together, and become smooth again. The cold of the cream was doing this, so don't worry. Caramel when hot is very liquid, but if it comes in contact with something very cold, it decreases the temperature of the caramel, and it will become very firm. -- you can see this if you take caramel sauce and apply it to some cold ice cream - you will see the caramel stiffen up very quickly. This is what is happening and is normal. I hope you finally got it smooth again.

    Thanks for specifically telling us to use low heat in order to not boil off the water and burn the sugar. Which is exactly what been happening to me. You really broke down this finicky recipe for us dumdums. Subscribed.

      Hello Corterri, Thanks so much for watching. Never give up, everyone starts out at the beginning, and doing this a few times will give you confidence and you'll say eventually wow, that was easy ! Yes the trick is not to boil too quickly, or the water disappears and the sugars burn. IF you are boiling it and see the water is evaporating too quickly, simple add some more water, this is a little trick that you can use. By the way I have many more caramel videos on my channel here on UA-cam that could help you out with more info on how I do it. I have videos where the caramel is much lighter in color.       +Khadija Miah Was reading the comments. I wouldn't used condensed milk because it's too thick and introduces too much more sugar. It might work though.
      I'm thinking about trying evaporated milk as a substitute. The problem is the large can is 12 oz which is about 1-1/2 cups. So I'd have to up the sugar and other ingredients. The small can I can't remember how many ounces and they seem expensive, but if it's not 1/2 cup, I could probably add a little regular milk.

      Confusing ? how so ? Once you buy a scale, you're quickly realize how easy it is to measure using weight. It's also by far the most accurate method of measurement. By the way, 1 cup = 250 grams. The Metric system is so easy. Everything divides and multiplies like magic. Cups, yup, easy too......

      Hi Tom ! 🙂 Caramel lasts a very long time. Store it in an air tight container in the fridge, and it can last a month or even more. It just doesn't go bad very quickly. I hope this helps ! and thanks for watching !

      FitAnge S Hi Angie, I'm glad you enjoyed watching :-) Yeah if you don't want it that dark, just boil less. Perhaps I'll do yet another caramel video with a much lighter colour caramel. I never do it exactly the same, and it's amazing how it darkens so quickly. I waited for the bubbling to finish to show everyone, but this also made it darker. Dropping in the butter when it looks like you want it will stop that darkening and you'll have a lighter one that I made here. Thanks for watching Angie, I appreciate it :-)

Quick question, how do we know what is the maximum temperatures that I shouldn't go beyond, for example, I might need caramel to be dark but still not get to the burnt stage or how we can be alert like a few seconds before we reach that stage so that we can immediately add heavy cream

      Hi Osama 🙂 you would have to boil this at a high temp in order to burn it. IF you use a med heat and are with the caramel at all times ( which is a must ) you should not have a problem. I realize this caramel is dark. I have many more caramel videos on my channel here that show you how to make it much lighter in colour. IF you ever think your caramel is going to burn, remove it from the heat immediately, and stir to keep it from burning on the bottom. I must also say that you should be using a good quality pot that has a thick bottom.     Hello, I made this following your video. The only thing is that after I let it cool it was solid . After 4 hours uncovered. What should I do or should I have done ? 😊 Ty

      Hello INdianSuMMer 🙂 This is easy to fix ! This just means you boiled the caramel too long. IF you can still push a finger into the caramel, you can fix this easily. Add a few tablespoons of water to your caramel and now just gently heat it enough so it becomes soft enough to let you stir in the water.... if you can do that, it will thin out the caramel and you will have it soft enough to pour at room temp. IF a few tablespoons isn't enough water, add another tablespoon of water, and it will work. I hope this helps and let me know if you had success !

    Hi , I made this recently for a cake. It turned out well generally. it did take me more time to bring it to my desired color. The color and texture was fine as well. Just one bit I noticed was, after going into the fridge for several hours the sauce had a bit of grainy feel to it rather than being smooth. The sugar did melt completely while I was waiting for the right color. What else cud be wrong chef?

      +Thalyta Borges Hi Thalyta, ah that's good to hear :-) I'm glad my new caramel recipe helped you out :-) Thanks for trying it out :-) If you wish to use this for apples, you'll want to boil it more so that it is thicker. Even 1 minute more of boiling will make this caramel sauce much thicker. You can also watch my stages of caramel video ( Caramel 101 ) where I show you this caramel at different temperatures.       +BakeLikeAPro Hi! Thank you for replying! I did and it looked really beautiful and thicker however it tasted little bit burned, so I will try again. Do you suggest vanilla extract? And also, do you know the temperature I should dip the apples? Sorry, I know you are a caramel expert, maybe not apples. I'm just looking for help. Thanks anyways!
