I live in New Mexico and find the same thing in stores here (and everywhere in our country, I'm sure). So is it a question of terminology or flour composition? The flour I observe in the video looks pretty white to me, but looks can be deceiving. Personally, I mix half all-purpose and half bread flour for most of my white loaves. All purpose is definitely the cheaper one and more easily available in the last couple of years. With the war in Ukraine, flour supplies may be less certain for now. I am thankful to have any kind of flour to work with and am experimenting with more obscure flours like quinoa, buckwheat, chickpea and so forth. Also, we have paper cups in our country, but the ones I see are lined with plastic. I don't think I would trust paper cups here anymore. Paper muffin cups won't give you the same shape, but they might be safer. I have learned to use empty tuna cans and chicken cans to make buns. The larger chicken cans make a nice burger-size bun.

I understand that in Europe, at least Germany, wheat flours are even more clearly defined. I love going to King Arthur baking to see all the varieties, don't you?
