"Unleash the Flavor of the Pacific: Authentic Samoan Mackerel with Coconut Cream"

    Mackerel with Coconut Sauce (Faiai Eleni | A Samoan Delicacy)
    This is one of Samoa's favourite delicacy. The traditional way of cooking is in the Umu on the hot rocks in coconut shells however it can be cooked in the oven with an oven roast tin or wrapped up in foils. A very simple but tasty dish with just 3 main ingredients and other optional ingredients if you choose.
    Ingredients
    • 2 cans of tin fish (Eleni)
    • 2 -3 cups of Kara coconut cream
    • 1 can of coconut cream
    • 1 large onion finely chopped
    • Salt to taste
    • Small amount of chopped chillies (optional)
    Method
    1. Open the cans of tin fish and drain the liquid
    2. Add it in a bowl with coconut cream
    3. Add chopped onions
    4. Mix well and add salt
    5. Transfer them into coconut shells or foils or baking dish.
    6. Bake in the oven for 30minutes or more depending on how you cook it.
    7. If you're using coconut shells and baking in the oven, make some foil rings for the coconut shell to sit on properly.
    8. Once it cooks then let it sit for few minutes
    9. Serve with taro, bananas or cassava
    10. It's also yummy to have it with rice.

My poor girl got Covid last week and kept me busy attending to her needs while isolating. I hope you're well sister. I was watching your Jack in the Box Mukbang and couldn't comment straight away but I remember having Jack in the Box for the first time in Vegas if I could remember when we drove up from LA with my brother and sis law. Apparently at the time they didn't have one in Utah. I think in 2012 was the time we did that drive. I remember my sis in-law getting so excited about it. This is how we bake in the umu with the shells. Thanks again my sister for always checking on me and the family. It's like having a big sister checking on me. I appreciate our friendship sister.     Hi Milz, that’s the best way to have faiai with or without eleni. I like mine without.. When in Samoa, I would ask Family to make me some
    You like spicy, that’s awesome. I’m not a fan of 🌶 but I admire those (like yourself, that do)

I agree with you sometimes I like the plain ones like back in Samoa the plain ones in the coconut shells taste yummy with tarp or bananas straight from the umu. I'm weird with my extra ingredients especially lime, lemon and chillies. Hope you and family are well Aunty Faye. Appreciate your support always. Last night my son made some donuts using your two ingredients and he loved it. He loves cooking like me except he'll offer to cook the dishes that he likes best 😂😂 love to you and family.       Hi Ale, no they won't burn but you have to soak your coconut shells first in water for at least half hour or more then start your cooking process. Hope I've explained it clearly Ale. Take care❤️
