You should catch Binging with Babish's channel gurl. Not vegan, but check out his Master of None's carbonara episode, he made both the regular and the vegetarian version Dev made.
I always add a skosh of naturally fermented plain sauerkraut brine to any "aged" cheese sauce I make, like cheddar or parmesan. Natural salt brines give that special lactic tang to nut or veg based products that don't have cultured dairy in them. It must be balanced out by a neutral sweetener, but it works. Really enjoyed the process in this one and how enthusiastic you are when everything's mixed in the pan! TFP : )
I notice something every time I watch one of your videos: I head immediately to the kitchen. Sometimes it's to see if I have the ingredients to make your recipe and sometimes it's just to eat because you make me hungry.
When I make my version of Carbonara, I use white beans for the sauce. I blend them super smooth and thin it out a little with water and/or non-dairy milk until I get the consistency I want. That usually makes for a preeety thick and creamy sauce and I love the taste (mixed with everything else of course).
So I just made this... holy shit it was tasty. It's such a simple recipe but damn it's better then any creamy pasta I've ever had. Doesn't make me feel yucky when I over indulged either.

Indian Black Salt is really added for it's sulfur content, hence da "eggy" taste. Sometimes heat can make that go away fairly quickly, so you add it at the end :)

You can also chop some more zucchini in small cubes and fry it on a high heat until it is crispy and brown. That's what they do in Italy to make vegetarian carbonara.
I just made this and it was amazing! I WISH I had a better blender to blend that sauce but it was still so yummy! I added mushrooms, and baked cherry tomatoes for a little extra yum to mine too. Even my kids loved it! Definitely a win and an EASY dinner! Thanks a million!

Lauren I'm not sure if you know but once you open a can, you shouldn't put it back in the fridge in a can as not only can the taste of the tin dissolve into the food but there have also been cases of botulism which is a food borne disease.. the latter isn't as common anymore but idk just might be relevant regarding the tinny taste :)

Cabbage town restaurant makes the best Zuke sauce, called Kelly's zucchini sauce. I love it and did it many ways. Carrots are a must in this dish. We served this at our wedding for over 150 it was awesome'
This looks legit Lauren :) One thing my eye lacked though, was parsley. To me the essential of a carbonara is parsley. However recipes?! Calls for creativity and if parsley was not on hand leave it out. You could also use mushroom or eggplant bacon as a substitute. The "vegg" is also very handy in that dish. Anyways good job as always :)
To go along with black salt, especially for tofu "eggs" ... a little truffle oil or truffle salt and a pinch of poultry seasoning mixed in with the nooch. The best.

Cucuzza squash are the long Italian “zucchini” I grew them, quite the ornament as well as delicately delicious.
I love how long this video is!! Also this looks delicious! I will have to find a good pancetta substitute but the sauce looks awesome!
