Just to be clear, there are pecorino varieties that are made with bacterial rennet which is vegeterian, so just buy the correct cheese and it can be vegetrian!

In his carbonara videos he explained that the reason he is against garlic in Carbonara is that the Guanciale is already heavily flavoured with, among other things, garlic.

I make my vegetarian carbonara with mushrooms, which I bake crispy in olive oil, just as you would with guanciale. Also very nice and with a bit of umami flavour 😉

Thank you for the recipe! You inspired me to do something similar. Since I'm not the biggest zucchini fan, I just crushed a bit the garlic cloves, caramelized them and used them instead of guanciale or pancetta. Not very healthy, I guess, but I LOVE the creaminess and the intense umami flavor!

Please don't make this for your vegetarian friends. The recipe is not vegetarian. PEcorino contains rennet from slaughtered animals and is therefore not vegetarian.

@@TheCotzi The version with microbial rennet tastes just like the non-veg friendly one in my opinion. I know that's not the case with parmesan etc. It's easy to find in supermarkets in the UK, but may be harder to find in other locations
Already did! My wife is from italy and we are both vegetarian. Imagine how happy she was when i served this. Gamechanging is frying the zuccini instead of stir frying it. That way it doesnt get all soggy and mushy. I must admit i used parmiggiano reggiano instead of peccorino (my wife prefers it) ;)

Thank you! I’ve been trying to figure out how to make a decent carbonara for months. Thankfully spaghetti with scrambled eggs and parmigiana is still edible 😂 Tonight I finally got it right. Added spinach and toasted pignole for a little crunch. CIA trained chef husband approved 😊
@@vincenzosplate I have done it twice. The first time I didn't have Pecorino so I had to use Parmigiano Reggiano. Apart from that I followed your recipe, but found it a bit bitter, probably because of the cheese. The second time I bought good Pecorino cheese, La Molisana pasta and Vegetarian Bacon (nothing vegetarian is similar to guanciale) and did the exact recipe you did except I cooked the vegetarian bacon with butter and added the previously fried zucchini at the end. And I must say this second attempt went very well. Nothing was left at the end and everyone ate with a satisfied look. My 6yo son loved it and asked me to do it again. So I'm adding this to my regular recipes. I'll do it with fresh pasta next. So thank you for this recipe.

@@vincenzosplate There are many vegetarian dairy cheeses. They are the cheeses that are NOT made with animal rennet. Vegan cheese is a different thing entirely; it's not even cheese. :) People making your dish will just need to source a hard cheese similar to pecorino romano, but not made with rennet. It will be labelled 'suitable for vegetarians'.
just to let you know that pecorino is actually not vegetarian (nor is parmigiano reggiano for that matter) because it is made with lamb rennet to curdle the casein in the milk. a good substitute for vegetarians could be something like Vegetale di Sardegna which is made from vegetable rennet. nice video though :)

@@vincenzosplate I'm going to horrify you with smoked tofu and creamy almond butter sauce. Frying some smoked tofu for 5-8 mins until crispy outside, chewy inside. Add salt and garlic. Onion perhaps, I don't remember exactly. Whisk together almond butter and water and add to it Add nutritional yeast flakes (good one are hard to find, though, many just taste super yeasty, certainly avoid organic) to get a cheesy flavor. Might also use vegan cheese substitute, but yeast is more basic. Mix in the pasta Add a shit ton of pepper. I like to add some lemon zest to that sauce before adding the pasta, but that makes you scream even more. I don't want to call that carbonara though, but it's inspired by carbonara and the German fucked up version using creams instead of eggs (almond butter + water is a classic cream substitute, it's obviously behaving different, and you end up with a more scrambled egg reduction if that ends up drying out). In any case make sure to use good almond butter. Unsweetened, I prefer Italian or Spanish ones, certainly do not use Californian. Californian almonds are bland garbage.
I like to roast my veggies with min oil rather than fry as healthier. A mix of roasted Mediterranean veg would make a great carbonara for meat-free day 👍

the cheese isnt vegetarian friendly because of the rennit and try smoked tofu its so good for this dish as a ham substitute

But the South is big into BBQ: and I do have to smoke my NC style pork from time to time (so no Kosher diet myself, and am all into the traditional Italian recipes). Just now getting some vegan recipes for other people, Seems vegan diets are getting more popular, so how to cook vegan like an Italian should garnish views! P.S., just saw your video of how to cook pineapple pizza like an Italian: bravo-I would have thought no Italian would have touched that. The funny thing is that it's called Hawaiian pizza, but was actually invented in Canada.

well I made a vegetarian version, not a vegan! But there are many vegan cheese brands out there

@@vincenzosplate There are many vegetarian dairy cheeses. They are the cheeses that are NOT made with animal rennet. Vegan cheese is a different thing entirely; it's not even cheese. :) People making your dish will just need to source a hard cheese similar to pecorino romano, but not made with rennet. It will be labelled 'suitable for vegetarians'.
just to let you know that pecorino is actually not vegetarian (nor is parmigiano reggiano for that matter) because it is made with lamb rennet to curdle the casein in the milk. a good substitute for vegetarians could be something like Vegetale di Sardegna which is made from vegetable rennet. nice video though :)

well a vegan carbonara would be quite impossible, that's true challenging
@@vincenzosplate I'm going to horrify you with smoked tofu and creamy almond butter sauce.
Frying some smoked tofu for 5-8 mins until crispy outside, chewy inside. Add salt and garlic. Onion perhaps, I don't remember exactly.
Whisk together almond butter and water and add to it
Add nutritional yeast flakes (good one are hard to find, though, many just taste super yeasty, certainly avoid organic) to get a cheesy flavor. Might also use vegan cheese substitute, but yeast is more basic.
Mix in the pasta
Add a shit ton of pepper.
I like to add some lemon zest to that sauce before adding the pasta, but that makes you scream even more.
I don't want to call that carbonara though, but it's inspired by carbonara and the German fucked up version using creams instead of eggs (almond butter + water is a classic cream substitute, it's obviously behaving different, and you end up with a more scrambled egg reduction if that ends up drying out).
In any case make sure to use good almond butter. Unsweetened, I prefer Italian or Spanish ones, certainly do not use Californian. Californian almonds are bland garbage.

I like to roast my veggies with min oil rather than fry as healthier. A mix of roasted Mediterranean veg would make a great carbonara for meat-free day 👍

@@huneydubs by definition, vegetarianism excludes any form of animal flesh but eggs are not flesh. So eggs are vegetarian but not vegan.
