Cooking in the bag is good. Cooking without the bag, a complete game changer. The sauce caramelises and goes lovely and sticky over the ribs. I baste every 5 minutes while cooking, with a silicone basting brush. Absolute YUMMO!

pretty much the same ratio as a good buffalo wings, either you like meat off the bone or you don't. normally though once you try it you appreciate the taste vs the amount of meat is worth it.
