I have exactly same thoughts about Turkey! I have been there once and never recovered from the magic tht turkey holds ❣ can't wait to go back and explore it more 🙌😍
My grandfather was born in Northern Macedonia in 1891, during the end of the Ottoman occupation. Many dishes mingled between the two cultures. I spent mornings in the kitchen with Dedo as he used to pull up a chair for me at the stove. I have a memory of him making cilbir but I was just too young to remember how. I remember eggs, butter, and Hungarian paprika. I've looked and looked but could never find until now when I added "Turkish" to my search. Thank you for posting!
The ignorance and cultural biases are killing me! Why would you call Ottoman era as occupation? Occupation” suggests a temporary presence, often awaiting a resolution military occupation during war. Empires aimed to present their control as permanent and unchallengeable. Historical empires rarely viewed their control of land as temporary or illegitimate. Instead, they used terms like: Conquest (e.g., Roman conquest of Britain) 🇬🇧 Colonization (e.g., British colonization of Australia). Rule or dominion (e.g., Ottoman rule over the Balkans). Annexation (e.g., annexation of regions into larger empires like the Persian Empires). Hence there were no such thing as Hungarian pepper. Spain isn’t that far from Hungary, but chiles took a different route to get there. When the Moors were exiled and the Jews were expelled from Spain, they brought chiles with them across North Africa. The Portuguese brought them south along the west coast of Africa to their trading posts in India and Thailand. From India, Middle Eastern traders brought chiles west with them to Turkey. As the Turkish armies pushed west into central Europe to expand the Ottoman Empire, they brought chiles with them. When the first chiles arrived in Hungary via the Turks, they were called “Turkish pepper” or “heathen’s pepper.” Though the Turkish troops eventually left Hungary, chiles stayed.

This is the first time I've seen this with fried eggs, generally it's poached. I do make this with fried eggs but I fry the eggs in olive oil basting them to set the top of the yoke, then I place the eggs over the yogurt and sprinkle Aleppo pepper into the oil heat it up and then pour it over the eggs and yogurt. Quick and delicious
