I made this last night with provolone (I don't like swiss) and I added parmesan to the panko...my hubby and 2 sons went berserk! 5***** Best my husband has ever eaten. In Germany it is basically just a stuffed schnitzel. But now seeing this I want to try the rolled version. Because I think the way you make it (especially baking instead of frying in the pan) will be sooo much easier to make for more people. Update: I made them and my fiance and me loved them. Super delicious and also easily reheated in an air fryer in case you have left overs.

The taste was just as I expected following your guidance to ensure I get this right. I substituted the flour for a Keto friendly flour that works perfectly! This is one of my favorite chicken dishes and my family goes nuts when I make it, mainly on holidays or special occasions. I usually mix panko crumbs with cornflake crumbs to give it a golden color and crispy texture. Always roll up a couple of extra ones to keep in the freezer for dinner for hubby and myself in the future. Never was successful at making a compatible sauce for it. for anybody with gluten sensitivities, there’s gluten free panko crumbs, and you can use rice flour instead of ap flour for the roux. it doesn’t give the same depth of flavor as ap flour, but it works decently for many roux and sauces.
My all-time favourite chicken dinner! I serve it with green beans and pilaf. Everyone loves it! I like the butter in the panko trick. I will definitely do that next time. Thanks, John!
Well...I made this tonight. The sauce is amazing. The chicken with ham and cheese amazing too. The panko crispy and golden brown but when you said you can add more than salt and pepper I used some Lawry's and garlic salt as well as salt and it turned out way way to salty. I'm going to go salt free next but this is a fantastic recipe and very well done video. Thank you.
Thank you so much, I watched this video. Bammm!! 2 chicken breast, frozen, I cut in half while they were still slightly frozen, I actually got 3 cuts from one. I didn't butterfly, but got then flattened enough for the ingredients. Followed the steps, using Italian bread crumbs, because that is what I had. My goodness. I love your videos ! I am Swiss and grew up in the Basel land area of Switzerland and we had Cordon bleu almost every week ..it's also the most popular dish in Restaurants . But we make it with pork , and never swiss cheese ( Emmentaler in Swtzerland ) better with Greyere , we also sometimes add a little mustard on the ham . And the the 'schnitzels' get folded in half , and the breaded and fried in a pan . Then we eat it with a slice of lemon squeezed on top ( I have never seen it served with sauce ) and french fries ....hahaha I feel like an expert as I have eaten so many and also served them daily in the restaurant I worked at . Anyway just my input ...this recipe does look great but I would use a different cheese and no sauce ;)

Great recipe! I make this from time to time and I prefer this version instead of deep frying. Actually pretty simple and not too much effort. It did take a lot longer to cook thought.

I do something similar with a chicken breast which I invented about 40 years ago and it’s about the only way my husband will eat chicken! Butterfly out a chicken breast then add a sausage ( you can brown it slightly if you like). You can spread some sage and onion stuffing over the inside of the chicken breast before adding the sausage. Then fold over and wrap with a really nice bacon , smoked works well but you can use unsmoked just as well. Place into a casserole dish, you can sprinkle some grated cheese of choice over the top but my husband just prefers it plain and simple! Cook in the oven for 30 minutes gas mark 6 or 200 C which I think is about 400F. It’s so versatile you can serve it with a salad, or chips or mash potatoes and vegetables or with roast potatoes and vegetables as a Sunday roast. Enjoy!
My mom made her tacos the same way (sans picks)! It was nice to fill them and not worry about the filling falling out. She had the “usual” fillings ….and chili beans and Le Seur peas. My goodness those were delicious!
