Easy Chicken Francese Recipe

This is a classic recipe from Italy. “Francese” is Italian for French. But my Italian mother, like all good Italian cooks, added parmigiano reggiano to the recipe, specifically, about a 1/4 cup to the flour mixture for dredging. Talk about ratcheting up the flavor (although it did make for a slightly messier frying pan). Totally worth it however! ❤️
How is it from Italy and means French chicken?? The sauce is quite similar to béchamel which is also French
@@519achilles Presumably because it is an Italian interpretation of a French dish, otherwise it would be called chicken Francaise. Bechamel is a milk-based sauce with no lemon. It is also used profusely in Italy, particularly in the North, where is is used as a primary ingredient in lasagne. 😉
Ok first, lovely recipe. Italian pronunciation is Fran- Chaz- A. The letter E has an A sound in Italian. I know you mentioned adding herbs to the flour dredge but the Italian interpretation of a French dish should include garlic powder, oregano and, at least some Italian parsley. It needs more than salt and pepper. I learned to cook in an Italian kitchen with Mom and grandma. Every recipe has a flavor profile to include garlic, basil, oregano, onion and olive oil. Then you add wine, lemon, tomato etc. I love your sauce… being a sauce not a gravy. Gravy is too heavy for this delicate lemon egg based coating for the chicken. There’s no breading here, so gravy would just overwhelm the chicken. Lovely.
