As a Greek I endorse this recipe, Joel🏆 Some Moussaka versions leave out the potatoes for even more eggplants. There is also a Zucchini Moussaka variation but is less popular. Instead of a bechamel sauce one can use a Greek joghurt sauce with eggs, cheese etc. It's very light and originates in the Greek island of Thasos. Me and my family are very sad that Whiskey is gone😭💔

No butter, no cheese sauce and no meat. Tried a healthier version replacing cheese sauce with small dollops of cottage cheese, meat replaced with extra-firm crumbled tofu, chopped vegetables all sautéed together with EVOO, and a small square of dark chocolate into the tomato sauce to give it a deep richness & cut its bitterness! Assembled! Yummy😋 Would have LOVED your version when I was 30 years younger ☺️

When eggplant is that small I never salt it ever. I do remove some of the skin though. Love, love, LOVE Moussaka😋Goat cheese chev and some lemon zest in the bechamel is amazing in this and how I do mine. Τελειότητα! Α loved comfort food at the right time.. welcome back chef. In my greek family we dont boil the potatoes, we just frie them and we use them at the bottom, before the aubergines. It somehow makes the mousaka tower more steady and they keep some crunchiness. We also use cephalograviera or kefalotyri instead of parmesan.

Yesterday, we lost our 4lb toy poodle. She lived 19 years and 3 months. We cried for her and for Whiskey.
No butter, no cheese sauce and no meat. Tried a healthier version replacing cheese sauce with small dollops of cottage cheese, meat replaced with extra-firm crumbled tofu, chopped vegetables all sautéed together with EVOO, and a small square of dark chocolate into the tomato sauce to give it a deep richness & cut its bitterness! Assembled! Yummy😋

When eggplant is that small I never salt it ever. I do remove some of the skin though. Love, love, LOVE Moussaka😋Goat cheese chev and some lemon zest in the bechamel is amazing in this and how I do mine. In my greek family we dont boil the potatoes, we just frie them and we use them at the bottom, before the aubergines. It somehow makes the mousaka tower more steady and they keep some crunchiness.
We also use cephalograviera or kefalotyri instead of parmesan.
