Looks tasty. Just a tip: I have nearly a similar recipe but I grate 4fresh carrots and add that to the mince, then frying it together. . This makes the dish healthier and naturally sweeter. You do not even detect the carrots afterwards. I also add grated carrots to my spaghetti bolognaise mince when frying. Anything for more vitamins when I prepare for my family!
Was about to add the same comment!! I'm adding carrots to Lasagne and to Bolognaise as well. I managed to reduce salt to zero level now (except cooking water for pasta).
This is basically a modified version of a classic Greek dish called Pastitsio. Biggest difference is the addition of the leeks to the bechamel, which sounds delicious. In the Greek version, you would flavor the meat mixture with a touch of cinnamon.
@kurtjohnson4816 You are right. In Pastitsio though we also do not put the pasta with the béchamel. We put cheese in the pasta and place a layer of pasta, a layer of minced meat, again pasta and on top the béchamel with cheese (and my personal addition - rusk crumbs which make the top crunchy). The cinnamon is a MUST in the meat to give that extra taste! 👌🤌
you don't need to waste the oil by adding it to the water when you boil the penne. you in fact don't add the oil so that the sauce will stick to the pasta better

I tried this tonight. My daughter asked me what was different about this recipe while I was preparing. I said it's like "next level" lasagna with wine in the meat sauce, and the pasta drenched in a creamy cheese sauce (with leeks...YUM!!). It did not disappoint!!

Nice. easy dinner found in lots of places. Had it as a kid in the US South in all its variations - with chicken, different cheeses, cream, different pastas. In Spain they use Spanish olive oil (the sweet, nutty kind), add red bell and frequently Manchego. Oh yeah, and top with Spanish olives. Perfect for cold weather blues.
Oil in the pasta water coats the pasta, preventing it from soaking up too much of the sauce. So, depending on what you are trying to do, it could be okay to add it to the water. Tossing cooked pasta with butter does the same thing.
Adding Oil to pasta water is a personal preference to some but it does absolutely nothing whatsoever regarding the sauce. All true Italian Chefs absolutely detest that advice regarding oil and pasta.
This does look nice. I like the leak sauce idea. I'm surprised you didn't add any herbs at all though. I reckon thyme and parsley would be a good addition to the meat mixture.

looks amazing. I'm definitely going to make this. Only change i might make is to use heavy cream, but it is certainly healthier this way. Blending the leaks into the reduced, flour and milk mixture is an absolutely brilliant concept! The great thing about a recipe like this is that you can go anywhere with it. You can add any kind of good pasta/lazagne veggie, sub out veggies for the meat, whatever. It's just a really strong base recipe that you can take anywhere. My wife loves lazagne with white sauce, she would definitely love this recipe.
Why do you need to add heavy cream to this dish, it really is over egging the pudding. She already added two kinds of cheese to a sauce that has butter and milk and then cheese on tip. In these traditional types of dishes you use herbs and spices to add flavour, dairy was a precious resource, cream would have gone to making butter, hence the use of milk. It's seems to me that Americans dont know that sometimes less is more. I'm all for cooking with dairy but if you use to much it just makes a dish cloying rich.
Prepared this recipe last night. It was absolutely delicious, better than any lasagne I’ve ever had. As others have noted, the bechamel sauce with leeks and Parmesan is the game changer! I added some oregano and garlic powder to the meat sauce, and doubled all the cheeses😊. Thanks so much for the recipe!

I call mine "Cheater Lasagne". I use my own spaghetti sauce layered with elbow macaroni and sharp cheddar. No bechemel sauce. I bake it in the oven at 350F for about 45 minutes or until the cheese on top is bubbling and golden. Super easy and a great way to use up leftover sauce.😊❤

@@FemiNelson-sb1em Instead of cheese topping, you could reserve a bit of the bechamel sauce and add it to 2 egg whites beaten stiff. Fold them together - a whisk actually works better for not knocking out air- King Arthur proved it. Anyway and then bake that on top. It will deflate some but it rises up way over the edge of the casserole an inch or so but doesn't drip out. It is really pretty, and so delicious. This is more like a Greek Pasticcio than any Spanish dish I have ever seen and in some regions of Greece they do a soufflé topping instead of cheese. The leeks in this dish have to be amazingly delicious.

My take away from this delicious recipe is the leek béchamel. IT has to be good. I'd personally make both sauces saucier prior to baking to leave more leeway combating el dente pasta soaking up all the sauce but looks like you nailed it. My family will love this.

I don’t have the patience to cook this! But, there’s NOTHING like a rustic European dish to devour when you’re hungry. Just looking at it, I could eat it right now. Throw in a beautiful bread, maybe some salad… SO good.

Looks delicious. I would not use oil in the pasta water. It prevents the pasta from absorbing the wonderful cheese sauce. You might want to add a small amount of carrots and celery into the onion and cook it down. Finally after deglazing with the wine, add some tomato paste to intensify the tomato flavor. I lived in Spain (Madrid) for several years, with only Spanish friends and flat mates, and these are not typical Spanish dishes!! 😮 They seem very German to me! In Spain we eat fish, seafood and different tapas and salads.

I love this recipe. In a similar way to many other Spanish or Greek pasta recipes, I like to imagine the reaction from my Italian friends at little details about method/technique, such as the oil in the pasta water and other trivial differences. "Ahh nooo-ahh. Ahh what-ahh is this-ahh travesty."
The oil in the pasta water is really Not necessary. it actually Prevents the sauce from clinging to the pasta, like a slick barrier, when just Salt in the water makes it beautifully.

YES you put oil in the water for cooking pasta. NO they dont create fatty protective layer on the pasta and therefore will absorb the sauce. THEY WERE PUT IN THE OVEN.
My mom makes a “hamburger casserole” and this reminded me deeply of that, except with more lux flavor profile. Like my mom would’ve used sharp cheddar instead of leek bechemel 😂 and I am sure red wine was never in my moms version. I will definitely enjoy this, the leftovers and will make it again! Thank you! Also I used up 2-3 partial boxes of leftover rotini and random curved pastas in this to get the 2/3 of a pound of pasta the recipe calls for. It worked well to have mixed up shaped pastas in this casserole, and helped me clean up almost empty boxes.
I might add some Cajun or Moroccan seasoning to the meat, and Panko breadcrumbs to the cheese at the end before it goes into the oven, to give the cheese a slight crunchy texture.
I love how all of these comments said not to put oil in the water because then the sauce won't stick to the pasta. But then she put oil into the water and then the sauce stuck to the pasta. Lol. Looks delicious!!!!
She put oil in the water so the pasta wouldn't stick together. I do that all the time and I've never had a problem with sauces adhering to the pasta. Experience of cooking that way will cause the naysayers to go, huh.

We lived in southern Spain for 4 years. I don’t recall ever eating pasta. A lot of garlic chicken, pork, seafood usually with the most awesome fries or a seasoned rice with a simple salad. Crunchy loaves of bread with real cream butter, olives, this insanely delicious avocado hard boiled egg chilled soup, the largest slices of chorizo cut thin like deli slices…..freakin drooling just thinking about it. All that topped off with a simple semi sweet scoop of ice cream or cookies with a cafe con leche. Pretty much the only thing I couldn’t or didn’t enjoy were the salt cured leg of pork. Was waaaaay too salty for me. ❤España

Nice. easy dinner found in lots of places. Had it as a kid in the US South in all its variations - with chicken, different cheeses, cream, different pastas. In Spain they use Spanish olive oil (the sweet, nutty kind), add red bell and frequently Manchego. Oh yeah, and top with Spanish olives. Perfect for cold weather blues.

Oil in the pasta water coats the pasta, preventing it from soaking up too much of the sauce. So, depending on what you are trying to do, it could be okay to add it to the water. Tossing cooked pasta with butter does the same thing.

Adding Oil to pasta water is a personal preference to some but it does absolutely nothing whatsoever regarding the sauce. All true Italian Chefs absolutely detest that advice regarding oil and pasta.

looks amazing. I'm definitely going to make this. Only change i might make is to use heavy cream, but it is certainly healthier this way. Blending the leaks into the reduced, flour and milk mixture is an absolutely brilliant concept! The great thing about a recipe like this is that you can go anywhere with it. You can add any kind of good pasta/lazagne veggie, sub out veggies for the meat, whatever. It's just a really strong base recipe that you can take anywhere. My wife loves lazagne with white sauce, she would definitely love this recipe.

Why do you need to add heavy cream to this dish, it really is over egging the pudding. She already added two kinds of cheese to a sauce that has butter and milk and then cheese on tip.
In these traditional types of dishes you use herbs and spices to add flavour, dairy was a precious resource, cream would have gone to making butter, hence the use of milk.
It's seems to me that Americans dont know that sometimes less is more. I'm all for cooking with dairy but if you use to much it just makes a dish cloying rich.
If you are going to add heavy cream to the bechamel you need to reduce the amount of butter/flour otherwise it will end up quite greasy.

Prepared this recipe last night. It was absolutely delicious, better than any lasagne I’ve ever had. As others have noted, the bechamel sauce with leeks and Parmesan is the game changer! I added some oregano and garlic powder to the meat sauce, and doubled all the cheeses😊. Thanks so much for the recipe!

I call mine "Cheater Lasagne". I use my own spaghetti sauce layered with elbow macaroni and sharp cheddar. No bechemel sauce. I bake it in the oven at 350F for about 45 minutes or until the cheese on top is bubbling and golden. Super easy and a great way to use up leftover sauce.😊❤

@@FemiNelson-sb1em Instead of cheese topping, you could reserve a bit of the bechamel sauce and add it to 2 egg whites beaten stiff. Fold them together - a whisk actually works better for not knocking out air- King Arthur proved it. Anyway and then bake that on top. It will deflate some but it rises up way over the edge of the casserole an inch or so but doesn't drip out. It is really pretty, and so delicious. This is more like a Greek Pasticcio than any Spanish dish I have ever seen and in some regions of Greece they do a soufflé topping instead of cheese. The leeks in this dish have to be amazingly delicious.
That is more like a baked ziti. Try it with the béchamel. It is amazingly good.

My take away from this delicious recipe is the leek béchamel. IT has to be good. I'd personally make both sauces saucier prior to baking to leave more leeway combating el dente pasta soaking up all the sauce but looks like you nailed it. My family will love this.
try adding a couple bay leaves to that white sauce. takes it up a notch.

Definitely wait until the last minute to mix the pasta with the Alfredo sauce. Mine was a little dry when I was layering it with the meat sauce.

I wrote down your recipe, thank you for giving C and F for the oven. The last one I made thought C was F and had to end up placing dish back in oven for another 20 mins. It turned out okay but there was a lot of juice in the dish but hey it was tasty too 😊

Looks delicious. I would not use oil in the pasta water. It prevents the pasta from absorbing the wonderful cheese sauce. You might want to add a small amount of carrots and celery into the onion and cook it down. Finally after deglazing with the wine, add some tomato paste to intensify the tomato flavor. I can’t wait to make it!

Of course it is "to die for". Using seed oils (so-called 'vegetable' oils) will kill you. I can't believe that people are still too stupid to realise this; after all, the evidence is out there. Use healthy and nutritious animal fats (butter, ghee, lard, tallow, suet) instead.

Recent research has revealed them to be a poison of the mitochondria, which is a direct root of inflammation, which in turn a direct cause of most modern diseases. Most people are unaware that these oils were first invented as industrial lubricants and it was Procter and Gamble who first decided to emulsify and bleach them to be sold as 'food'. They are used as nothing more than a driver of profit. Use natural fats instead as they are healthy.

I lived in Spain (Madrid) for several years, with only Spanish friends and flat mates, and these are not typical Spanish dishes!! 😮 They seem very German to me! In Spain we eat fish, seafood and different tapas and salads.

I love this recipe. In a similar way to many other Spanish or Greek pasta recipes, I like to imagine the reaction from my Italian friends at little details about method/technique, such as the oil in the pasta water and other trivial differences. "Ahh nooo-ahh. Ahh what-ahh is this-ahh travesty."

The oil in the pasta water is really Not necessary. it actually Prevents the sauce from clinging to the pasta, like a slick barrier, when just Salt in the water makes it beautifully.

NO they dont create fatty protective layer on the pasta and therefore will absorb the sauce.
THEY WERE PUT IN THE OVEN.
My mom makes a “hamburger casserole” and this reminded me deeply of that, except with more lux flavor profile. Like my mom would’ve used sharp cheddar instead of leek bechemel 😂 and I am sure red wine was never in my moms version. I will definitely enjoy this, the leftovers and will make it again! Thank you!
Also I used up 2-3 partial boxes of leftover rotini and random curved pastas in this to get the 2/3 of a pound of pasta the recipe calls for. It worked well to have mixed up shaped pastas in this casserole, and helped me clean up almost empty boxes.

I might add some Cajun or Moroccan seasoning to the meat, and Panko breadcrumbs to the cheese at the end before it goes into the oven, to give the cheese a slight crunchy texture.

We lived in southern Spain for 4 years. I don’t recall ever eating pasta. A lot of garlic chicken, pork, seafood usually with the most awesome fries or a seasoned rice with a simple salad. Crunchy loaves of bread with real cream butter, olives, this insanely delicious avocado hard boiled egg chilled soup, the largest slices of chorizo cut thin like deli slices…..freakin drooling just thinking about it. All that topped off with a simple semi sweet scoop of ice cream or cookies with a cafe con leche. Pretty much the only thing I couldn’t or didn’t enjoy were the salt cured leg of pork. Was waaaaay too salty for me. ❤España
