- I'm adding eggs to chorizo and potatoes for the perfect breakfast tacos. These breakfast tacos are simple but very delicious.
Spice up your morning with the ultimate breakfast comfort food: the chorizo and potato breakfast taco! I'm cooking potatoes, perfectly seasoned and pan-fried to perfection with savory Mexican chorizo. I'm also scrambling eggs for a protein boost, then crown it all with homemade salsa verde, bursting with fresh tomatillo flavor. This breakfast taco makes an amazing San Antonio morning. It's a hearty, satisfying, and totally delicious way to fuel your day!
INGREDIENTS
6 Russet potatoes
2 Tbsp cooking oil
9 oz Mexican-style chorizo
7 large eggs
salt and pepper to taste

My late grandmother made this from scratch for many decades. She was born in 1901 and passed in 1992.

Even though because of an health issue I can no longer have this on a regular basis (just once a month now) this remains my all-time favorite. One of my fondest memories as a kid was visiting my Tia Nellie in SF and going downstairs every morning to be greeted with a huge pile of chorizo con papas and a stack of fresh made tortillas on the dining room table 🤗

My mom is the same about potatoes. It's a generational thing. They didn't grow up with peelers, they bought them for us when we were kids so we could help and not cut ourselves!

Chorizo con papas with eggs was a staple breakfast in our family growing up. I still love it but can’t have it often because it triggers acid reflux.
I only use a paring knife to peel potatoes. Same as your mom it’s what I am used to. I use the potato peeler for carrots and cucumbers.

I just had to watch you make this. It's one of my favorite breakfasts. I like the soy chorizo and I had it in my fridge just for this dish, but I also had two hotdogs and some onion to go along with the couple of potatoes I had to use. I was wondering what I wanted more between the two and the chorizo won out. I'll have the other tomorrow, so nothing goes bad. I do have a tip that I use because no one in my house really likes chorizo and would never even want to try the soy one. So with this in mind and not wanting it to go bad, I put it in a ziplock bag and press it flat and freeze it. When I want to use it, I break off a piece. Perfect solution.

Im gonna make this on the weekend. I usually make Pappas con chorizo with no eggs or chorizo con huevos. Or I'll make my Pappas solo with garlic salt and chili powder and fry them crispy. So good.
My dad taught me to cook chorizo with just eggs. I've heard of adding potatoes to chorizo only, as well. But I like your idea of adding onion and peppers with the potatoes. (no jalapenos for me. I'm Hispanic who can't eat spicy peppers😮)

It's in my DNA and I can't change that! lol It's so much fun to cook with family and friends. I was wondering if you had any other recipes for using chorizo. I typically use it with potatoes, eggs and beans but was wondering if you might have another idea for the chorizo. I would love to see a choriqueso recipe or a chorizo casserole. Now I'm hungry.
