I've got chorizo in my fridge and I'm totally gonna make this for lunch! Adding onions makes sense too, you never can go wrong if you start with aromatics!

I just made it following your recipe, and it turned out AMAZING! My mom used to make it like this when I was a kid, and I loved it. The taco shop near me cooks the chorizo and egg separately and then put them on the burrito. Definitely not as good. I also added shredded cheese bacon and tater tots. It was the best I ever had. I made this Saturday using the soy chorizo ,It was so good ! Really enjoyed it ,never knew there was a soy chorizo ! Very tasty !
