    --------------------------------- RECIPE -----------------------------------
    Ingredients
    * 1 1/3 cup (120g) almond flour (‼️NOT PACKED‼️)
    * 2 tablespoons (30 ml) maple syrup
    * 2 tablespoons (30 ml) coconut oil, melted
    * Pinch of salt
    NOTE:
    1. Please, use the Digital kitchen scale fo the best results!
    2. Instead of maple syrup take 2 tbsp sugar/low-carb sugar and 1 tbsp water.
    3. Instead of coconut oil take Ghee or yellow part of melted butter. Vegetable oil don't work in this recipe.
    4. Don't let the dough chill too long. Coconut oil will solid at room temperature and the dough will be crumbly and will not come together.
    5. Don't pack down almond flour!
    Instructions
    1. Preheat oven to 350F (175C). Line a baking sheet with parchment paper.
    2. In a medium bowl, combine all of the ingredients, stirring to combine (be sure to break up any lumps in the flour and/or sugar).
    3. Shape dough into about 16 balls. Space balls 2 inches apart on prepared baking sheet. Flatten halfway (e.g., with a fork, cookie stamp, the flat bottom of a measuring cup, or fingertips)
    4. Bake in a preheated 350F oven for 12 to 15 minutes until the edges are golden brown and the centers no longer look wet. The cookies will still seem somewhat soft, but that is due to the high amount of fat (almond flour + coconut oil). They will become firm once completely cooled.
    5. Remove from oven and cool on sheet for 10 minutes. Transfer to a wire cooling rack and cool completely.
    Storage: The cookies are best stored in the refrigerator, in an airtight container, for up to 2 weeks (or the freezer for up to 6 months).
    ENJOY!

      Do they really become crispy. All almond flour cookies iver tried become too tender & break, can't even hold them.
      Are these hard enough to keep in containers

    • @foodmetrica

      @@prajaktabhivpathaki7878 yes, of course, they have the texture of real shortbread cookies. This is thanks to the fat in coconut oil and almond flour. Maple syrup or granulated sugar works best in this recipe, but not honey or anything similar. I really hope you enjoy the cookies :)

    I made this recipe with a keto sweetener and it was so delicious. I don't have to spend money on those expensive packaged cookies anymore. I also roll them into tiny little balls to make my own crunchy cereal! Shake it into a confectioner swerve mixture with cinnamon and boom a much healthier version. Before doing keto my favorite cereal was cinnamon toast crunch. I missed it so much, but it doesn't do my body any good. This is a healthier alternative and is still quite delicious.

    My dough was much drier than the one shown on the video. I had to increase oil and maple syrup by 50% in order to get it to hold together. I tried to make the 16 cookies as stated but they would been the size of quarters so I increased the size of the cookies and only got 12. Even with doing this, the cookies were on the small size. Nice flavour and texture. Will make again but with above revisions.

      Hi! Sorry the cookies did not take the shape that you had hoped for! I use a teaspoon to scoop the dough and then use a fork to flatten.
      I strongly recommend using a digital scale. If the cookies did not come together, it is most likely because of a too much almond flour (it is easy for almond flour to PACK when using cups measurements).

    I made these but I had to add more coconut oil and baking soda just to get the mixture to look more like a dough and stick together. Was a little confusing.

    I tried to substitute maple syrup with monkfruit sweetener for keto purposes. Mine turned out too crumbly and would not hold shape.
