Low Carb Almond Cake Sugarfree! Glutenfree!

  • How to make a sugarfree and gluten free Almond Cake. You can make this with just few ingredients and without electric handmixers.
    Here's what you'll need:
    3 egg yolks
    1 tsp vanilla
    1/4 cup milk (60ml)
    1/4 tsp salt (2g)
    1 cup almond flour (112g)
    1/2 tsp baking powder
    3 eggwhites
    1/2 tsp of vinegar
    2-3 tbsps of stevia
    some almond flakes
    Baking time may vary depending on your oven specifications. Please adjust accordingly.

    Nice Low Carb recipe.
    Just 2 things because I bake LC cakes often.
    Stevia is not the best choice for cakes because the aftertaste is bittersweet. Its fine for no bake desserts. Its better when its a stevia blend with erythritol. Although the best choice for baked sweets is monkfruit or allulose. If not available the second choice is erythritol or xylitol.
    Each almond flour brand absorbs slightly different amount of liquid. So sometimes you have to add a couple of tablespoons milk or cream or one beaten eggwhite to have the right consistancy. Its very helpfull to say what almond flour brand you use.
    Your flourless swedish almond cake is great by the way.

      Hi, how much sticks/tbsp of monkfruit sweetener should i replace with 2-3 tbsp of stevia?

      @@floreng.2833 Since I don't know what Stevia brand was used I don't know how sweet it is. There variations through ratio. But the recipe says "or any other sweetener" so I would use 3 spoons too. Good luck.

    Pretty good. My batter wasn’t frothy because I accidentally started adding the ingredients wrong. The cake did not rise much but it was still good. I used coconut sugar. Next time I’m going to double the recipe and maybe try blueberries at the bottom like some others did. We used shedded coconut as the topping. It taste very light and healthy 😊

    Please say a prayer for me. I’m going to double this recipe because I’m going to be making a sheet cake and I’ve never done this before and I’m making it sugar-free low carb for someone who is on keto for his birthday tomorrow. I will let you know how it turns out I’m gonna make the icing as well. I wish you had placed on here how many servings this did I made you three times the amount, since this is a small cake that she made.

    used this the other day for the base of a cake with blueberry, raspberry, banana (mashed lightly with a fork) filling in between layers closed with whipped cream, toped with some strawberries and lime zest blood sugar went from 4.7 to 5.4 1½h later after a decent slice (and a low low carb meal (some shredded carrot in my coleslaw). 👍 didn't use stevia i used some granulated cyclamate+ saccharin sweetener, about 3 teaspoons in total. 2 in base 1 in whipped cream (3 dl unwhipped)

      @@bkcarole7356 never said it was either of those things, i said the meal i had before the cake was low carb. and i included that cus that would affect my blood sugar readings as well, which i reported. this was one banana in the filling for an entire cake, so basically 1/8th of a banana.

      i was commenting and included additional things that affect blood sugar for ppl with diabetes that are looking for a cake base to use and reported my blood sugar readings before and after so that they could take that into consideration when evaluating this.

    Hi, thanks for sharing this recipe! I'd like to ask for an advice: I tried this recipe in a slightly modified version (instead of 60ml of milk I used 50ml of almond milk and 10g of ghee - because of casein intolerance), everything else remained the same, but my cake ended up being way more gummy, way less "fragile". Any idea what could go wrong? I baked for 20m, then added +5 and then +10 minutes but the consistency hasn't changed. 180C/360F. Thanks ;)

    I made it yesterday for my moms birthday with the exact measurements but the cake was completely raw even after 40 minutes.it was browning beautifcully from outside but did not cook inside.Never have such thing happened to me ever.

    Wait one freaking moment. I just looked up on Google do you know how many carbs is in 1 cup of almond flour? Buckle your seatbelt 28 g! How can this be low carb! Sure the Stevia makes it sugar-free, but the carbs are out of sight. I’d suggest you make some of that sugar free low-carb fudge that only has two carbs per slice. Of course you could slice your almond bread really super thin but to get 28 carbs out of an 8 x 4 x 2 loaf! Thank you but no thank you

    I have been on keto for 7 years now. Almond flour is a big turn-off for me. Maybe real super fine texture once in a blue moon.

      Don't like their texture. They make me crave for the real thing (flour)😅. Others love them but not for me.
