    One full cup of peeled almond, ground
    Powdered sugar 120 g
    One large egg white to mix the above and get into cookies
    Brush egg yolk to cookies top,
    Bake at 200 degree Celsius for 9 to 10 minutes. Shake more powdered sugar on cookies top while out of oven and cool at room temperature.

      Converting 260 grams into cups can be tricky. It depends on what youre converting because the answer would be different if youre converting flour and sugar.

    We liked them so much we made them twice in a week. I used pre-ground almond flour as it’s always on hand and added 1 tsp of almond extract to the second batch which was a big hit! Thank you for sharing your recipe!

      Monk sugar is 1:1 so what ever the amount will be the same,though I go less due to over sweetening 😊

    Thank you! This is just the recipe I was looking for. I have a batch in the oven right now. I could see doing so many things to have many options for these cookies. First is adding some lemon or orange zest to the dough. Second, would be to make thumbprint cookies and put a spoonful of jam in the middle. I have some homemade apricot which would be fabulous I think. I will have to start experimenting!
    Right now my grand experiment is using egg substitute. I added a tsp of baking soda just so they don't get too tough. I brushed almond milk on the tops. I'm sure they won't get that golden goodness. I had some sprinkling sugar I wanted to use up so I put that on instead before baking. They look very festive. But, avoiding eggs is worth it.
    Also, I rolled my dough into a log. Then cut equal thicknesses. I used a glass to roll them a bit into oval shapes. Made it easy to get even sized cookies. Although, I messed up and only made 13 instead of 15. So much for my math skills.
    Just taste tested it. The crumb is not nearly as dense as yours looked. They are light and soft. Hopefully that holds out when they cool completely.
    I baked mine in a convection oven at 390 for 10 minutes. Then I put them under the broiler for 2 minutes on the lowest rack. Golden brown perfection!

      @@teresahaugen3974 I always have to do conversions when baking with egg substitutes. I just need a basic recipe to get started then I'm on my way to getting creative. This is a great basic recipe to create all kinds of variations. Never let a recipe hold you back!

      @Lisa Knobel I wonder about using aquafaba in place of the egg whites? That might bring the cookie texture closer to the original. I have not used egg white substitute before.

      @@AJ-nf9fz Most cookies are made with sugar, so watching this video pretty much guarantees sugar will be used. You should watch WFPB cookie videos. You're more likely to get recipes using dates, etc., as sweeteners. Actually, I believe Keto recipes use alternative sweeteners. You should look for those.

      @@SpainonaFork I did prepare these cookies and was a great success !! Because I didn't have unpeeled almonds, I used the regular ones and they resulted in brown cookies. One important thing I learned is that once you finish cooking it, they are very soft and even if you are "hungry" you need to let they cool for about 20 minutes and their consistency will get just right. Thanks much for sharing the recipe - all my family enjoyed it :) Muchas gracias !!

      I just found you! So I’ll be watching. Because I have Spanish in me ,I’d like to try some recipes from Spain. My problem is I don’t like seafood. Lol

    This video just came out but curious if anyone has tried w an egg substitute. Looks like they would also be good dipped in chocolate.

      You can use a little mashed banana or ground flax seed mixed with water, much love :)

      I was thinking the same thing since I don't eat eggs! Also, I think I many try adding some lemon zest to the powdered sugar with the sprinkle!

    Not only does parchment paper keep things from sticking, you will seriously overcook something before you burn it on parchment paper. The only thing I do different is sprinkle them with turbinado sugar. Then you pulled out the powdered sugar. My grandmother probably ran out of powdered sugar one day and had to wing it. She was young when she left Spain and maybe one of the aunties said to sprinkle sugar on and she didn’t know the difference. Or maybe someone in Albuquerque decided to change things around. Who knows! But I want to try it your way

    I just baked them. I have T1 diabetes, so I had to some some changes - I used powdered erythritol instead of sugar, and as it's less sweet than sugar, I added a bit more, and then used fresh lemon juice instead of water. Easy, fast, and super delicious - I'll be doing them a lot!

    Delicious, I added 1/2 tsp pure almond extract. Next time I'll form into crescent shapes and dip in chocolate. Thanks for this keeper recipe!

      I made Spanish Chocolate Cake (using the "Spain on a Fork" method) and Venezuelan Chocolate Cake (Chocolate Marquesa) before, and I'm going to give the Spanish Almond Cookie recipe a try during the Holidays.

    They taste like marzipan, awesome, I like to have them for Christmas. You can add a bit of almond extract to enhance the flavor.
