Thank you! This is just the recipe I was looking for. I have a batch in the oven right now. I could see doing so many things to have many options for these cookies. First is adding some lemon or orange zest to the dough. Second, would be to make thumbprint cookies and put a spoonful of jam in the middle. I have some homemade apricot which would be fabulous I think. I will have to start experimenting! Right now my grand experiment is using egg substitute. I added a tsp of baking soda just so they don't get too tough. I brushed almond milk on the tops. I'm sure they won't get that golden goodness. I had some sprinkling sugar I wanted to use up so I put that on instead before baking. They look very festive. But, avoiding eggs is worth it. Also, I rolled my dough into a log. Then cut equal thicknesses. I used a glass to roll them a bit into oval shapes. Made it easy to get even sized cookies. Although, I messed up and only made 13 instead of 15. So much for my math skills. Just taste tested it. The crumb is not nearly as dense as yours looked. They are light and soft. Hopefully that holds out when they cool completely. I baked mine in a convection oven at 390 for 10 minutes. Then I put them under the broiler for 2 minutes on the lowest rack. Golden brown perfection! Again thank you for this simple and delicious cookie. My morning coffee thanks you too!

I just baked them. I have T1 diabetes, so I had to some some changes - I used powdered erythritol instead of sugar, and as it's less sweet than sugar, I added a bit more, and then used fresh lemon juice instead of water. Easy, fast, and super delicious - I'll be doing them a lot!
Not only does parchment paper keep things from sticking, you will seriously overcook something before you burn it on parchment paper. The only thing I do different is sprinkle them with turbinado sugar. Then you pulled out the powdered sugar. My grandmother probably ran out of powdered sugar one day and had to wing it. She was young when she left Spain and maybe one of the aunties said to sprinkle sugar on and she didn’t know the difference. Or maybe someone in Albuquerque decided to change things around. Who knows! But I want to try it your way

@@SpainonaFork I did prepare these cookies and was a great success !! Because I didn't have unpeeled almonds, I used the regular ones and they resulted in brown cookies. One important thing I learned is that once you finish cooking it, they are very soft and even if you are "hungry" you need to let they cool for about 20 minutes and their consistency will get just right. If you are diabetic, just use erythritol and you can indulge! You can buy it plain or Swerve has it in granular, powdered and brown versions!

@@SpainonaFork I did prepare these cookies and was a great success !! Because I didn't have unpeeled almonds, I used the regular ones and they resulted in brown cookies. One important thing I learned is that once you finish cooking it, they are very soft and even if you are "hungry" you need to let they cool for about 20 minutes and their consistency will get just right. Thanks much for sharing the recipe - all my family enjoyed it :) Muchas gracias !!

I would not add lemon into an almond flavor but that it my preference
1. I love that these are naturally gluten-free! I’m celiac and wheat allergy, so I must avoid wheat and gluten. This is a perfect and easy cookie recipe.

I was thinking the same thing since I don't eat eggs! Also, I think I many try adding some lemon zest to the powdered sugar with the sprinkle!
