    Dear, Dear Linda: Thank you for tuning me in to this amazing pecan pie recipe. My niece followed your instructions carefully, watching your video a few times. You are a teacher, and you always tell us why you do what you do. My niece combined by hand, used the right ingredients, included a fantastic vanilla that I have. She lightly toasted the pecans in the oven. You weren't exaggerating. This was absolutely the best pecan pie I have ever had! it's my dad's favourite pie, and he was thrilled with it. And it's so easy....so neat that you got the recipe from a Dear Abby column. Our only regret was that my niece made the pastry using the cuisinart recipe. that didn't turn out so great. next time, I'll use the roll out tender flake pastry sheets, or make tarts for Christmas. Tarts really do make the most sense anyways. I made the sirloin roast to your instructions. it was larger than I thought. just over 3 lbs. I am a cook poultry, pork, and fish cook. I barbeque steaks to perfection, but I'm not known for my beef roasts. It was so fabulous...I had no idea such a lean cut could be that tender. even the skinny ends that were well done were tender. it was otherwise pink throughout. So delicious. There should of been leftovers, but my son and husband devoured it. several hours before roasting, I grabbed a package of liptons onion soup with garlic and mixed it with olive oil to make a paste, then rubbed it all over the roast. I made sure it was room temperature before placing in the oven. I wanted to carry the roast in and out of the oven myself, so I used a Pyrex instead of one of my nice cast iron pans. too heavy. I made a bridge out of large carrots to lift the roast up. So, we had wonderful roast carrots with the beef and potatoes. I was tired yesterday, so I didn't mske gravy, and I used instant mashed potatoes. I can't peel potatoes right now. with the instant potatoes, I used butter and half and half cream. they tasted like the real deal. Thank You for all your advice. I haven't regretted making any of your recipes and using your techniques! Sending a huge God Bless You, from Saskatoon! ~ Julia

    Thanks very much for this recipe, it looks wonderful. I currently have a recipe for a pecan pie that is absolutely wonderful. I got it from my ex sister in law who got it from her mother in law who lives in Georgia and it is fantastic, but I can't wait to try this one and I bet it may beat the other one. Thanks for doing this video and sharing this recipe. I miss dear abby, I grew up reading her column. Wonderful days back then, the world isn't the same anymore, matter of fact it is a lot scary.

    I'm excited to try this recipe. I love pecan pie and the idea of little individual servings is great. I do have to tell you I was thrilled and impressed that you scraped all the ingredients out and into the bowl no waste. So many people just pour out and leave a little ingredients in measuring cup and bowls. It drives me crazy. Put ALL the ingredients in. Thank you so much for a great video.

      Hands That Cook
      I'm glad he liked it. He's the reason I got back into wanting to cook again. Can't say that for my ex who was critical and always telling me how to cook. This guy who I knew in school does not do that. He says practice makes perfect and if it don't turn out try again. Learn from mistakes. He said what makes a good cook is not some one that can just grab a cook book follow it to the T . But a cook who cooks with LOVE. So with that being said I got back in to cooking where I left off when ex decided to criticize and tell me how to do the cooking. Basicly I have up for a while and we ate prepaired food from grocery store or ate out. So ya me back to doing what I wanted to do yrs ago. Learn to cook like my Grandma and now I have began. Blessings to you.

    Thought I'd share this famous recipe by Marjorie Kinan Rawlings who wrote, "The Yearling." I grew up not far from her house on the lake.
    Recipe Source:
    “Cross Creek Cookery” by Marjorie Kinnan Rawlings
    Ingredients:
    1 cup sugar 1 1/4 cups Southern cane syrup 4 eggs 4 tablespoons butter 1 teaspoon vanilla 1 1/2 cups pecan meats, broken coarsely 1 pie crust, unbaked
    Directions:
    Boil sugar and syrup together 2 or 3 minutes. Beat eggs not too stiff, pour in slowly the hot syrup, add the butter, vanilla and pecan meats. Turn into a raw pie shell and bake in a moderate oven about 45 minutes, or until set.
    Note: Rawlings declared this dish too rich to eat an entire slice, saying she had “served it to those in whose welfare I took no interest.” We dare you to try it anyway. And if you haven’t tried cane syrup, you should. You can find it at some specialty markets and almost always at one of the weekend booths at the Jacksonville Farmers’ Market on Beaver Street. Even if you never make the pie, cane syrup is good on everything from pancakes to biscuits.

      Hi Caroline, I appreciate the generosity and thoughtfulness by supplying this recipe. I have tasted many pecan pie recipes in my life and rule out those that are too sweet or bland. The video I chose to demo is the only one I'll serve. It's perfect. The recipe you've supplied is described as so rich you won't be able to finish the slice. I know it won't pass my taste test. If you can't enjoy a single slice of it, it's too sweet and rich. Maybe some of my viewers will try the recipe but personally in my humble opinion, my version cannot be improved upon nor do I want to try another recipe and stray from one I adore and I deem as perfect. I do appreciate you sharing though. Linda

    I love your voice! Second run at watching. Were those toss-a-way/recycle aluminum pie tins or not? These are my Mothers favorite before I made flan...not easy to transport to holiday parties. You said "hardly" packed brown sugar. Did you mean packed hard or not very packed hard? From the North, I am in love with your Southern accent. I did a recipe from a newspsper once back in the early 90s. Dutch apple pie in a brown bag. Best results. Never found it again.

    • @Handsthatcook
      @Handsthatcook  6 років тому

      Hi Diana, those are premade tart shells. They are throw away tins. Brown sugar is 95% always packed firmly. This was firmly packed...the confusion was using the wrong word. I'll look for that pie recipe for you and do a demo if I find it. Thank you so much for watching! God Bless, Linda

      Meli, Thank you for such kind and sweet words...you warmed my heart!! This really wasn't Dear Abby's recipe, it was in her column but came out of Kentucky. This is the most wonderful pecan pie I have ever eaten and I really hope you feel the same after you've eaten it. If you followed my instructions, you'll have a fantastic tasting pie...but wait until it cools completely to room temperature before you cut it or it will run when you slice it. It wouldn't hurt to put it in the fridge for a half hour or hour. I hope Meli, that you love this pie. TFW, God Bless, Linda

I guess Im just being a nervous nelly about when to take it out.... do you have any advice you could give me.....
